Grandma's Baking Powder Biscuits

Reviewed: Mar. 3, 2013
This is an awesome biscuit recipe! My mom, who has always followed her mom's recipe, asked me for this one after eating these drop biscuits! Please note: I also made a batch where I rolled the dough out and cut the biscuits. My husband loved them because they were much easier to pull apart, but their is a difference in texture when you roll them. My mom and I both preferred the drop biscuits to rolling and cutting this recipe..

Easy Cucumber Party Sandwiches

Reviewed: May 12, 2013
I made this for a mother's day church tea today and these were a hit! They disappeared in minutes and multiple people asked me for the recipe. I followed the recipe to a t, making the cream cheese mixture the night before and assembling them at church. I made a recipe and a half of the cream cheese mixture hoping it would work for 48 quarters of bread, but it was way too much. I'm using the leftovers for a nice veggie dip and big veggie sandwichs (it is delicious with roasted red peppers). Will make again! Thanks!

Island-Style Fried Rice

Reviewed: Jan. 10, 2012
The whole family loved this. I did make some changes though because I didn't have time to run to the store before cooking. No oyster sauce available- used soy, hoisen, and pineapple juice to substitute. Used ham lunch meat in place of span. Used big can of pinapple.

Breakfast Bacon and Sausage Pizza

Reviewed: Oct. 19, 2013
Great and easy breakfast dish! I used a 9 by 13 dish, one crescent roll package, half the bacon, sausage and eggs and it still stood really high. It fed our family of four for breakfast and lunch. My three year old had two pieces at lunch! Note: I put the salsa (homemade) through a strainer so it wouldn't get the crust soggy.

Dila's Chicken-Stuffed Peppers

Reviewed: Jul. 23, 2013
This is excellent and fits the happy hormones diet! My husband and mom both loved it and said it could be a weekly dinner. I did paraboil the peppers (and used a variety of colors). Very pretty presentation. I dressed it with not only the sour cream, but also a scoop of salsa. Yummy!

Very easy and a nice traditional scone....much like the ones I had at tea time in England!

Parmesan Baked Potatoes

Reviewed: Jun. 1, 2011
I was leaning toward rating this recipe as a 3, but my mom fought for the 4 rating. The potatoes were good, super easy to to prepare, and a nice change from baked or mashed. I did think that they were a little dry though. I did not use red potatoes...I used Russets, so maybe that was the difference. I cut them in 1 inch thick slices, covered the pan with foil, and flipped them mid way though, uncovering them.

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

Reviewed: Jun. 1, 2011
De-li-cious! Followed the recipe to a t (almost, that is- I did substitute green onions for chives)...and the steak was super moist and flavorful on its own...but add the blue cheese butter and it is heaven! (Surprising that we loved it because we are not huge blue cheese fans!)

Basic Ham and Bean Soup

Reviewed: Oct. 19, 2013
A nice solid soup. I soaked the beans overnight in the unheated crockpot. In the morning I drained them, put in fresh water and the turned the heat on with the ham hock and seasonings. It stewed all day and was very yummy. I did add extra carrots because we can never have too many veggies. Will make again!

Mountain Apple Cobbler

Reviewed: Sep. 22, 2013
These were a hit at our church luncheon. I did make a few changes that people suggested in earlier reviews: I cut up four apples instead of two and coated them with a mixture of 1/2 brown sugar, 1 tsp cinnamon, 1 tsp vanilla, 1 tbsp almond extract, and juice from half of a lemon. I did let them sit overnight in the fridge. Instead of using all of that white sugar, I toned it down a notch with 1/2 cup brown sugar & 1/2 c white sugar. I added only 10 oz. Sierra Mist. I used the 2 extra apples and laid them around the sides of the dumplings. These were super delicious and gone in a flash!

Chef John's Stuffed Peppers

Reviewed: May 9, 2013
This is a fantastic stuffed pepper recipe...it was a hit with my hubby, my 12 year old, my 3 year old, and my 1 year old! I wasn't too spicy, but had a kick of flavor other bell pepper recipes tend to miss. I didn't have fresh Italian parsley so subbed fresh basil. Can't wait until tomorrow night's dinner....leftovers! :)

Make-Ahead Sour Cream Coffee Cake

Very good and easy to put together, but not ultra fantastic. The coffeecake was gone in minutes once the church breakfast began! The topping made the cake!

Chicken Cordon Bleu I

Reviewed: Mar. 29, 2012
This was very yummy and the family loved it. As mentioned in an earlier review, I made the honey mustard sauce from the Aussie Chicken recipe. I only rank this a four because the sauce stole the show and made this dish even better!

Bacon-y Bok Choy

Reviewed: Jun. 1, 2011
Yum, yum!!! I did alter the recipe and I enjoy it even more (see below)! Traditionally, I prepare bok choy with Asian flavors, and it is excellent with fish or another oriental dish. This recipe is a nice change. I just made it with a steak and potato dinner and it was a very complimentary veggie. I did change the recipe a bit. Instead of cooking the bacon before hand, I started with the olive oil and added 6 spoonfuls of real bacon bits that i got at Costco (call me lazy, I know). I added in the onion right away. Instead of 1/2 of a small red onion. I put in a whole medium sized red onion. Other than that I stayed true to the recipe. Beware: It is spicy!

Garlic Roasted Chicken and Potatoes

Reviewed: Jan. 22, 2014
I followed the recipe, except added more potatoes and carrots. The 6 six leg quarters would not fit into one 8 by 11 cake pans so I divided it into two pans with the additional potatoes and carrots. I also added pineapple rings to the top the last 20 minutes in the oven. The chicken lacked flavor, but when eaten with the pineapple rings it was yummy. Good recipe. May make again.

Corn Casserole III

Reviewed: Mar. 23, 2013
This was my first time ever making and eating corn casserole so I don't have much to compare it to. It was very simple to make and was well received. A couple of people said it was too moist in the center- I'm not certain is it is supposed to be! The leftovers were even better. I thought the flavors were right on and I will make it in the future when my hubby BBQs.
