Snakes in a Blanket

Reviewed: Jan. 22, 2014
This is an yummy vegetarian alternative to pigs in a blanket. The Alouette spread is a must for flavor! I also added havarti and Cheddar to give it some extra flavor. Everyone loved it!

Easy Turkey Taco Soup

Reviewed: Jan. 22, 2014
My husband loved this.....he said it was better than mom's chili! I did double the ranch beans and add an additional can of black beans. I also doubled the meat. Otherwise kept the recipe the same. Delicious!

Garlic Roasted Chicken and Potatoes

Reviewed: Jan. 22, 2014
I followed the recipe, except added more potatoes and carrots. The 6 six leg quarters would not fit into one 8 by 11 cake pans so I divided it into two pans with the additional potatoes and carrots. I also added pineapple rings to the top the last 20 minutes in the oven. The chicken lacked flavor, but when eaten with the pineapple rings it was yummy. Good recipe. May make again.

Basic Ham and Bean Soup

Reviewed: Oct. 19, 2013
A nice solid soup. I soaked the beans overnight in the unheated crockpot. In the morning I drained them, put in fresh water and the turned the heat on with the ham hock and seasonings. It stewed all day and was very yummy. I did add extra carrots because we can never have too many veggies. Will make again!

These were good and a nice change from steamed green beans. My husband commented he liked them even better the next day!

Breakfast Bacon and Sausage Pizza

Reviewed: Oct. 19, 2013
Great and easy breakfast dish! I used a 9 by 13 dish, one crescent roll package, half the bacon, sausage and eggs and it still stood really high. It fed our family of four for breakfast and lunch. My three year old had two pieces at lunch! Note: I put the salsa (homemade) through a strainer so it wouldn't get the crust soggy.

Slow Cooker Chicken Taco Soup

Reviewed: Oct. 3, 2013
This was a hit for our family and I love how easy it is to make. I used Bud Light and it tasted great (not beer-y at all). I put this together with frozen chicken breasts at 11 am and kept it cooking on high for 2 hours, then turned it to low before leaving the house. When we got home after our daughter's basketball game that night, it was fully cooked and scrumptious! It was a tad on the spicy side for my 3 year old- but the Rotel I used must not have been mild and the chili beans may have been seasoned. This may become a regular meal for us....and I'm thinking about making it when we go camping. Thanks for the recipe!

Mountain Apple Cobbler

Reviewed: Sep. 22, 2013
These were a hit at our church luncheon. I did make a few changes that people suggested in earlier reviews: I cut up four apples instead of two and coated them with a mixture of 1/2 brown sugar, 1 tsp cinnamon, 1 tsp vanilla, 1 tbsp almond extract, and juice from half of a lemon. I did let them sit overnight in the fridge. Instead of using all of that white sugar, I toned it down a notch with 1/2 cup brown sugar & 1/2 c white sugar. I added only 10 oz. Sierra Mist. I used the 2 extra apples and laid them around the sides of the dumplings. These were super delicious and gone in a flash!

Pretzel Turtles

Reviewed: Aug. 16, 2013
These are always a hit both to make with the kids (age 3 and 12) and to eat. I use Rolos and Snyder's Butter snap pretzels. I've also tried it with Pepperidge Farms pretzel thins, but I prefer the butter snaps.

Dila's Chicken-Stuffed Peppers

Reviewed: Jul. 23, 2013
This is excellent and fits the happy hormones diet! My husband and mom both loved it and said it could be a weekly dinner. I did paraboil the peppers (and used a variety of colors). Very pretty presentation. I dressed it with not only the sour cream, but also a scoop of salsa. Yummy!

Garlic Chicken

Reviewed: May 12, 2013
I followed the recipe, but this was not a hit for our family. I used the breast filets instead of full breast and it was dry and lacked flavor. I may try it again with full breasts to see if it as good as everyone says....I'll update the review then.

Easy Cucumber Party Sandwiches

Reviewed: May 12, 2013
I made this for a mother's day church tea today and these were a hit! They disappeared in minutes and multiple people asked me for the recipe. I followed the recipe to a t, making the cream cheese mixture the night before and assembling them at church. I made a recipe and a half of the cream cheese mixture hoping it would work for 48 quarters of bread, but it was way too much. I'm using the leftovers for a nice veggie dip and big veggie sandwichs (it is delicious with roasted red peppers). Will make again! Thanks!

Chef John's Stuffed Peppers

Reviewed: May 9, 2013
This is a fantastic stuffed pepper recipe...it was a hit with my hubby, my 12 year old, my 3 year old, and my 1 year old! I wasn't too spicy, but had a kick of flavor other bell pepper recipes tend to miss. I didn't have fresh Italian parsley so subbed fresh basil. Can't wait until tomorrow night's dinner....leftovers! :)

Creamy Au Gratin Potatoes

Reviewed: Apr. 2, 2013
This recipe is comfort food and went really well with our Easter ham and pineapple sauce. I doubled the recipe and put it in a 9 by 13 casserole dish. Like another reviewer recommend, I cooked the diced onions with the butter from the sauce. I did a layer of potatoes, then cheese sauce, then potatoes and so on and so forth. I did added an extra cup of cheese to the double recipe. The texture turned out great, and they were quite yummy, but it was lacking in the flavor department. Next time, I'll add some spices to add some dimension to the dish.

Corn Casserole III

Reviewed: Mar. 23, 2013
This was my first time ever making and eating corn casserole so I don't have much to compare it to. It was very simple to make and was well received. A couple of people said it was too moist in the center- I'm not certain is it is supposed to be! The leftovers were even better. I thought the flavors were right on and I will make it in the future when my hubby BBQs.

Whole Grain Breakfast Cookies

Reviewed: Mar. 23, 2013
These are very good, filling cookies. I followed the directions to a T. I will make again and try to sub out the oil with applesauce. The reason I give it four stars is because they cannot even compare to my grandma's oatmeal chocolate chip cookies (which are totally unhealthy, but unbeatable in flavor). I know I shouldn't compare these two, but if it is called a cookie, it has to hold its own!

Luck o' the Irish Brownie

Reviewed: Mar. 23, 2013
These were eaten in minutes at our St. Patrick's Day themed snack table at church. I got many compliments. Super delicious! I followed the recipe to a T, the center of the brownie portion fell, but I let it cool overnight before adding the mint layer. Maybe more baking time was needed, but the fallen brownie was still so yummy- more fudge-like in texture (I may try a brownie mix next time.....but I don't know if this really can taste any better). Will make again!

Grandma's Baking Powder Biscuits

Reviewed: Mar. 3, 2013
This is an awesome biscuit recipe! My mom, who has always followed her mom's recipe, asked me for this one after eating these drop biscuits! Please note: I also made a batch where I rolled the dough out and cut the biscuits. My husband loved them because they were much easier to pull apart, but their is a difference in texture when you roll them. My mom and I both preferred the drop biscuits to rolling and cutting this recipe..
