Creamy Zucchini and Spinach Rigatoni
Doubled this with my fingers crossed to have leftovers...it didn't disappoint!! We're not big 'shroom fans, so kept the amount at single recipe amount & dry sauteed them first to eliminate mushiness. They add such a nice flavor to the recipe. I also added a cup+ of finely chopped onion & sauteed it with the garlic as well as upped the spice amounts a little bit. Lastly, I substituted bouillon rather than broth. Great recipe. Will definitely make again (and again!!)

Creamy Baked Ziti
I doubled the recipe w/ my fingers crossed, so that we'd have leftovers. We weren't disappointed!! Super recipe, albeit not exactly super low fat, but awesome for meatless Mondays as well!! We're not big mushroom fans, so I halved the amount & sauteed them first (dry saute) to eliminate the mushiness. However, they add just the right amount of flavor to this recipe. I also added a large onion, finely chopped into saute mixture with garlic and used 2 c. of boullion (used cubes) rather than broth. Yum!

Quick and Easy Pizza Crust
Who wants to wait an hour for dough to rise on a weeknight?! This is a PHENOMENAL recipe. I don't keep bread flour on hand & the recipe works just fine with regular flour. I've used the dough with red sauce, white sauce...just about everything. As one reviewer suggested, use half the amount of water with the yeast and then add the second half while mixing..seems to fine tune the consistency of the finished crust. Since initially trying this recipe about 3 weeks ago, I've gone to it 4 times since! You won't be disappointed.
