I used to make a pie just like this which everyone loved, but I lost the recipe and it never came out quite right. I also lost my reputation for the best apple pie maker. I believe this is the recipe I have been looking for. The only difference is, instead of using water you substitue apple juice. This pie is just fantastic. I made a trial run this weekend, and there is just a sliver left this Sunday evening. No one wants to be the one who finishes the pie. I, however, have no problem with that, so after I finish this I will finish the pie. Love it, but next time I am going to substitue apple juice for the water!!!!! Also, I have to pre bake the crust for a few minutes or the crust will come out soggy in the center. Good luck.
