Lime Chicken Soft Tacos

Great simple chicken with very bright flavors. As others suggested, I tripled the sauce and did a quick 2 hour marinade.

Salsa Chicken

Cherry Cheezecake

Although the flavor was pretty good, this didn't really turn out that well. I may try it again, although If I do I'll use a muffin pan to make individual portions.

Vegan Chocolate Cake

A great, moist vegan chocolate cake! Made it for a b-day party for a vegan friend, and he thought it was fantastic. Us meat-eaters thought it was pretty great, too!

Baked Honey Mustard Chicken

Pretty tasty, although it's not a miracle dinner. Flavor was a 3 or 4 out of 5, but the prep time was great. Since it was so easy, I'll make it again when I'm in a rush.

Big Soft Ginger Cookies

Simply the BEST ginger cookies! Amost everyone that had one said that they were some of the tastiest they've ever had. Be sure to watch them carefully though -- I baked the first batch for about 9:00 minutes, and they came out a little harder than I personally like (still soft and chewy, but not "fresh baked" soft). I baked the next batch for about 7:45s and they were perfect!

Roasted Chicken with Risotto and Caramelized Onions

VERY good, although a bit more work than I thought It would be. I also used about 5.5 cups of Chicken Stock (instead of 7), because it wasn't really cooking down as much -- it could've been my crummy stove though. I also added a bit of garlic to the onion/vinegar mix, but otherwise cooked as described. Will make again!

Beef Stroganoff III

Quite Good -- although I think the cooking time is a little long. The meat was a little overdone after cooking for an hour, next time I'll try 35-40 minutes.

Vegan Crepes

Completely fantastic! I didn't have the problem flipping the crepes as described below, but I used a well greased pan and a thin spatula to do the work. I also only got about 9 crepes out of this recipe, which means maybe I made them a little thicker. No bother though, they were GREAT with some sliced strawberries and banana's with some melted dark choc. yum!

Anniversary Chicken I

This turned out quite well. I would only suggest using a bit more ranch dressing and teriyaki sauce. Also, I used real bacon instead of the bacon bits. Overall a great meal!

Nana's Apple Crisp

Oh..My..God. This is the BEST recipe for Apple Crisp I've ever used. It turns out perfectly with butter or margarine, and is divine when served hot with a side of vanilla bean ice cream! This NEVER fails to impress or satisfy!

Simple White Cake

This a great, simple mixture! The cupcakes turned out absolutely PERFECT when made with butter (very light and moist). However, when we tried it with margarine, the cupcakes were a little hard and not nearly as fluffy. Bake with butter and you can't go wrong!

Vegan Lasagna I

This was quite good -- and this is coming from a carnivore! :) My Vegan friends loved it, and my "meat and potatoes" wife also found it quite good! My only advice is to stew some additional tomatoes for a serving sauce, as it is a bit dry without it. In this sauce I simply used 2 additional cans of stewed tomatoes, about 2 teaspoons of garlic powder, a crushed clove of garlic and some salt and pepper. It was great! Also, this recipe can probably serve 12 people, so cook accordingly!
