Zesty Slow Cooker Chicken Barbecue

This is sooooooooooo yummy! I followed the recipe exactly, and couldn't have been happier. I will probably add onion next time, but I wanted to give a "genuine" review of the actual recipe.

"Pantry Raid" Chicken Enchilada Casserole

OMG, this was sooooooooo good! I left out the chili powder because all I had was hot tomato sauce and I didnt want to burn our mouths. I also used cream cheese that had onions in it (all I had), but it worked out great! You will not be sorry if you try this recipe. It is fabulous!

World's Best Lasagna

Jenny's Jambalaya

Great basic recipe, but needs to be jazzed up a bit. I used fresh garlic, added a chopped green pepper, and cut back on the chicken broth so it wouldnt be too soupy. I made it on the stove top, and simmered the chicken in the sauce, it gave it more flavor than adding it cooked. I added the shrimp during the last 5 minutes or so, and cooked the rice seperately. Added some cajun seasoning as well. Great recipe to build on....

Fra Diavolo Sauce With Pasta

You really need to double the sauce to make this recipe work. It is also a tad bit bland. Second time I made it I added onion, chopped red bell pepper (bottled), and a ton of fresh herbs (oregeno, basil, etc), and it was a LOT better (almost perfect!). I also added some mussels. Definitely a good "basic" recipe, but needs some help. :(

Angel Chicken Pasta

Love it! Make in a crockpot for convenience, and double the sauce ingredients. I add fresh mushrooms....I could drink the sauce it is soooooooo good!

White Bean Chicken Chili

Definitely needs some tweaking. I used tomatoes instead of tomatillos, and I put the chicken broth in a blender with an additional can of beans to thicken it so it was more of a chili than a soup. Definitely needs more spices as well. I added Adobe with cumin.

Slow Cooker Chicken with Mushroom Wine Sauce

Good basic recipe, but it really needs to be jazzed up a bit. I used fresh mushrooms and "real" onion in mine. Next time I will try more spices. Came out kind of bland, but I am not giving up on it, the chicken was so tender!

Slow-Cooker Posole

WOW WEE! This is soooo good! I used chicken (didn't have any pork), and substituted chicken broth for water (like I always do in soups). One note of caution....I used mild enchilada sauce, and it was still extremely spicy, but I love spicy. Just wanted to give fair warning!

Easy Spicy Chicken and Rice

I read the reviews, and used instant rice (added 1/2 extra cup), added 1/2 cup sour cream, a small can of chilis. and 1/2 cup of chicken broth. Melt a little cheese on top, and you have a winner! It was absolutely wonderful!!

Slow Cooker London Broil

YUMMY gravy! I added a can of mushrooms, and liked it. Don't cook it for as long as the recipe says, mine was done in half the time. Think I might add some red wine next time to jazz it up. All in all, a really good basic recipe that has a lot of potential.

Red Skinned Potato Salad

WOW WEE!! This is so delicious, I cannot even begin to tell you. I made it last night for a bbq dinner tonight, and I cannot keep from going to the fridge to grab just one more bite. I think what really makes it is the bacon. I did add a little bit of mustard, and used the new olive oil mayo to cut a bit of fat out of it. Absolutely fabulous. I will not use another recipe ever!!

Key Lime Pie VII

This is an AMAZING recipe. I brought this to a dinner party and I have never gotten so many compliments! I am not a dessert maker, so I was pleased with the easy ingredients and directions. I did find that you need to leave it in the oven for more time. I left it in for about 18 minutes, which is very different from the recipe. Worked perfectly.

Grilled Fish Tacos with Chipotle-Lime Dressing

Absolutely fabulous! I went ahead and baked the fish, since it was so delicate, but it turned out great. I have also just used store bought chipolte mayo (instead of the dressing recipe here), premade coleslaw mix, and pico de gallo from the produce section of the supermarket. That cuts some of the work down, especially if you are trying to make a quick weeknight dinner!
