Slow Cooker Pot Roast

Delicious!!!!! So tender, and the gravy was great! Wonderful for someone who has trouble perfecting gravy (ie. myself!), as you do nothing to it. I may try this with less or no ranch mix. I couldn't exactly peg it, but I think it added something I could do without (and I like ranch). I also used reduced sodium gravy mix, which I would recommend. I'm not sure it can get much easier than this, especially for something so tasty! Thanks!!!

Chicken, Eggplant, and Green Beans Casserole

We really enjoyed this for something different. I get eggplants in our co op and I have trouble using them as they are not really a favorite of ours. This was quick to prepare and the crunchy topping was great! Smelled lovely as it was cooking and the seasoning was just right. I did not have ground chicken, so I used ground pork.....delicious! Hopefully now I will stop letting those eggplants go bad!

Black Beans and Pork Chops

Made this tonight and would give it a 6 for ease! The taste was pretty good for something a little different. Next time I will follow the advice of others and add some other seasoning to the pork before I brown it. I served it over rice, which was great with the beans and to soak up the remaining "sauce." (it is a little watery) This is so easy, I am sure I will be making it again! Thanks!

Kielbasa with Brussels Sprouts

I just looked for a recipe for brussel sprouts as I had a bunch I needed to use. It does not get much better than this as far as how quick, easy and delicious this is. Great flavors for a comfort food that is a little different. The brussel sprouts almost come out like cabbage. I followed the suggestion of one reviewer which was to use water instead of oil, and I was glad I did. I did have to watch it closely, as I did need to add water a few times. I used smoked turkey sausage and oil was certainly not necessary. Overall a great week night dinner!

Aunt Jules' Balsalmic Chicken with Peppers

Great!! Made this as instructed, minus the fact that I only had two red peppers, no green or yellow (I bet that is yummy!). Served over rice. There was not a lot of sauce (although enough for two of us), so I would probably double it next time just to have some extra. It would also be fine without the sauce. Quick and easy to make on a week night and healthy delicious!! The flavors are great together. Thanks for sharing.....will be making this again!

Curried Tilapia with Mango Salsa

I have to be completely honest....I am really only rating the salsa, because I just used a citrus basil seasoning on the tilapia. We loved the mango salsa and I will definitely be making it again! So easy, fresh and delish!! The only change I made was using a jalapeno pepper instead of the serrano chili and it was great. I also used very little salt. I could see using this with chicken or pork as well. Thanks for sharing!

Ratatouille Bake

My husband and I really enjoyed this, although I would not consider it extremely kid friendly, at least not in our home. It was easy, fairly quick and great to use up those CSA veggies. With the exception of adding some mild Italian sausage on top of the cheese ravioli, I followed the recipe as written and think I would do the same next time. The sausage really gave it a little something extra. (I do think it would be great meatless as well) I also have to say, I really like a meal that you can actually taste all of the ingredients, and this was exactly that. Thanks so much for sharing the recipe! It's a keeper!

Creamy Chicken on Linguine

Just make this tonight for my nephew and husband, both who love pasta. They both really enjoyed it. I do not care for pasta, especially with a creamy sauce, but I actually enjoyed this as well. I gave it four stars (my husband said four, my nephew said 4 1/2 and I thought 4+). I did have to add some cornstarch to thicken the sauce and I also added mushrooms, which were a great addition. Otherwise, I made it exactly as written. I would agree with those who said to make sure the white onions are chopped small. Thanks for submitting a recipe I (the non pasta lover) will enjoy making! It will go into our rotation!

Spaghetti Squash I

Love, love, love this!!! I do omit the black olives, as I just cannot get myself to like them in anything! I also have not been able to convince myself that spaghetti squash would be a nice substitute for noodles (taste or texture wise), but I do not really care for pasta, so that may be it. I love it just for what it is! A nice healthy meal or side dish that satisfies without feeling stuffed after! Thank you for submitting this! I make it all the time and have shared it with many friends who have enjoyed it for something different.

Russian Mushroom and Potato Soup

SO delicious!!! This is my first time leaving a review, but since this was so easy to make and tasted so great, I had to make sure it got 5 stars! It is like a fancy potato soup with a little something extra! So good! I agree with the other reviewer who was skeptical of the dill, but it really is mild and makes it different than just plain potato soup. Thanks for the recipe.....it will go in the rotation for fall and winter!
