Indian Style Basmati Rice

I make this as the standard side to a chicken curry I make. It's really good and even my 4 yo son likes it. It could use "something" to give it a bit of pizzazz on its own, I just don't know what.

Touchdown Chili

No alcohol for this family, so went with the ginger ale alternative. This is just an amazing recipe. I always forget the simmer time, so I've had to make it in less time and it is still great!!

Spicy Honey Mustard Sauce

AS IS, it just didn't maintain each item's flavour. I used tabbasco, which may have made it less tasty. I'd actually say 3.5 stars. I didn't stop eating it.

Indian Chicken Curry (Murgh Kari)

Really a 4.5 stars. I also cut the breasts into large chunks. It's the best at home curry I've made, and I've tried many, trying to get to that "what we got at the restaurant" taste. This wasn't quite "that restaurant" but it was good. I did cut back on the final salt addition and my wife did say she thought it was still salty. I did about half the cayenne only because my 3.5 year old might have had a problem with this. He liked it just fine as I did it. I bet adding some thigh meat as well would make this just that much better. The chicken was a tad dry, but that's where the curry gets to do it's job. Honey Mustard Grilled Chicken

The wife wouldn't even finish. I didn't mind it but wasn't impressed. I did make into into a sandwich with fresh garden lettuce and cucumber, which helped.

Barbeque Beef Casserole

The family did NOT like this. Mostly is was the BBQ sauce. I felt it was ok. I've done a similar recipe in the past without BBQ sauce and it was better. A different sauce would likely make a difference, but I'll likely stick with my old method/version instead. 2.5 stars.

Waffles I

Great for delivery of maple syrup and butter. Did the beating the egg whites first, fold i last option and it's great. They crisp well and hold up well... but lack one important thing. Flavor. They are relatively tasteless on their own (as mentioned). When I don't have time for a proper yeast waffle, these are simple enough and worth making again. I'd actually rate 3.5 stars.

Souper Joes

I enjoyed this. Made it without the cheese cuz the wife wouldn't touch it with. It was like a slightly more fancy S.O.S., which she also won't eat, so I got a back door to food compliance. :) It was pretty salty, but I just realized I accidentally put in the remains I had of the onion soup mix which was more like 2-3 Tbl instead of the ONE in the recipe. Ooops. Next time I'll use a lower sodium cream of mushroom or even a cream of chicken instead. So simple and fast, yet very flavorful. Might have just found another "I'm too exhausted to make dinner" meal.

Pork Meatballs

This was great! The only changes I made were that I used about 1/2# pork and 1/4# ground beef and I didn't boil then. I flour dredged and pan fried them. I made a mushroom sauce and served over rice and they are awesome. Simple too.

Chicken Chimichangas with Green Sauce

This was quite good. I didn't follow everything for lack of a few ingredients and my wife's disdain for soft cheeses. The sauce: we don't like olives - nixed. But wow, so simple and yet to awesome. Would make a great soup on its own. We had chillies that were frozen from however long ago instead of the canned, which would have made it a little thinner I think, but taste-wise, about the same. Only used pepper jack cheese for filling and a left over grilled chx breast. I do a homemade taco seasoning (recipe might be around here somewhere) to cut out the salt and control taste. Would rather have deep fried, but don't have a deep fryer and didn't want to deal with the after from using a pot. Next time will try to bake as suggested in comments.

Chocolate Chocolate Chip Nut Muffins

This is a great recipe. The only changes I made was using 1cp instead of 1.5cp of sugar (trying to cut back here and there and I have read that cutting out 1/3 is usually not detrimental) and used two cups of chocolate chips and NO NUTS (I HATE nuts in my baked goods). I was going to use apple sauce instead of the oil, but my wife balked - "on the first attempt?!?!". I made mine in jumbo muffin tins and ended up baking for about 30 minutes. Made 6 of them. They came out super moist. I'd give 4.5 stars if I could.

Very Chocolate Brownies

This COULD be the best chocolate brownie. However, besides just putting ingredients and simple directions doesn't make it so. They taste amazing... I now have awesome chocolate crusted hard chocolate pudding. :) Admittedly, I followed the suggestion to cut in half and do a 8x8. Left in for a little over 30 minutes, as the cake tester never came out dry/clean. I let it set for about an hour, it was still goo inside. I put it back in a little longer. Not much change. I realize that it was likely the chocolate chips melting that caused it, so in hind site, I think you need to let the batter cool before putting in the second batch of chips in. I will try this recipe again, as even as it did come out, it's very good. Next time, however, I'll use bittersweet/dark chocolate in some combination. (EDIT) I made it again, same half recipe. This time I let the batter cool considerably before putting the whole chips in and bakes for 35 minutes. It was still less than set after a few hours, but much better. The next day, it was a lot more set and brownie like. I still think somehow the 2nd set of chips melts too much causing it to be runnier. I wonder if dark chocolate chips would fair better for that step.

Blue Cornmeal Pancakes

Love these. Followed the suggestion of using honey instead of sugar and that was great. As with many, I use yellow corn meal. I make these often. I've only made with pine nuts once and didn't care for the added value versus extra expense. They are great with blueberries though.

Spicy Oven Fried Chicken

Awesome! I add more cayenne pepper though as I like the heat to bump a bit more and sometimes I'll use panko instead of standard bread crumbs. I also make sure to let the breaded chicken set for a while before cooking to it's less likely to fall or crumble off during the initial pan frying or moving around. It still doesn't adhere to the chicken fully, but mostly good enough. I'd actually give it a 4.5 star rating.
