Butter-less Broiled Tilapia Parmesan

We loved it, and will certainly make it again soon. I used 1 T. Lite Mayo, and used coconut oil instead of butter. I made it in my toaster oven, and didn't flip the filets, I did add more seasonings; smoked paprika, red pepper flakes, garlic powder, and some Panko crumbs. It was so moist and yummy!

Roasted Brussels Sprouts

This is a prize winner! We loved these. I used to think I hated brussels sprouts; then I became ambivalent....Now I love them this way! They're almost like dessert. ? I doubt if I'll ever cook them any other way. Thank you!

Debdoozie's Blue Ribbon Chili

This recipe is wonderful. I'm not a "Chili Purist", and I love EASY. When it's easy and delicious, it's a bonus. I also substituted a 16 oz. jar of medium salsa, and a can of diced fire roasted tomatoes. I used ground turkey, rather than beef, and one can kidney, and one can chili beans. It was such a hit!

Garlic Brussels Sprouts

Oh, WOW! I can't believe how good these are! I've never been a fan of brussels sprouts, and my DH's face looks unpleasant when I mention them, but we ate, and enjoyed these with great pleasure. They are delicious! Five stars easily, on my score card.

Camotes al Horno (Baked Yams)

We loved this recipe! I baked the yams in the microwave, instead of boiling them, so they were done when I put them in the oven. I baked them at 350° for about 20 minutes. I'll be making these again. Yumm!

Hot as Hell Hickory Beans

I loved the sound of this recipe, and couldn't wait to try it. I did balk at the idea of an entire 7 oz. can of jalapenos, though, and used someone else's idea of chipotle chilis in adobo, and in a lesser amount. I changed a few things,such as using Ro-Tel, rather than plain tomatoes, and used fresh onions. We loved the beans, and the "bite".

Amazing Pork Tenderloin in the Slow Cooker

This is probably the best pork tenderloin recipe ever! It is so tender and flavorful. I used some dried onion flakes, and a mixture of tarragon, cumin, and oregano instead of the dried onion soup, and added a shot of worcestershire sauce, I will be making this often, I'm sure. Thanks!
