I am a mom of an 11 year old. I am a loan processor and therfore have very little time to cook. i enjoy quick meals with lots of flavor.

My favorite family cooking traditions
Christmas at my aunts home. All of the women get in the kitch and cook up a storm. The guys just relax and goof around.
My cooking triumphs
I have perfected a made from scratch new york style cheesecake. People request it very often.
My cooking tragedies
Tried to make salmon patties when ny husband and I were first married. I did not add enough flour and the patties fell apart. My husband took one look at that mess in the pan and said no way!!! I was heart broken.

Corn Cheese Chowder
This was great but I used 2 12oz cans of evaporated milk and 1 cup veg. broth and I also added garlic to the onions. I used 1 can of cream corn and 1 can of mexicorn, per another members recommendation. Loved this chowder and so did my whole family!

Ginger Glazed Mahi Mahi
Wow! This was great. I cooked it with coconut rice and baked asapargus and it was insane good!

Asian Coconut Rice
Yum! I made this to go with the Ginger Glazed Mahi Mahi and it was insane good! Wow is all I can say. Everyone in my house loved it!
