Black Chocolate Cake

Reviewed: Sep. 20, 2005
This is my new chocolate cake recipe. I swear I'm going to use this cake for everything. My husband is a chocoholic and he went nuts over this. The only changes I made was to sub coffee for the boiling water and butter for the shortening. Perfect, perfect, perfect.

Kielbasa and Veggies

Reviewed: Sep. 20, 2005
Good recipe. My hubby REALLY loves it. I've made it several times and have tweaked it a little. I don't use mixed veggies. I usually just serve a veggie on the side. I omit the lemon pepper and instead use garlic powder, onion powder, and pepper. I salt the potatoes only (the meat is salty enough). I also use colby-jack cheese to cut back a little on greasiness. It was pretty good as is, but we like it better with these changes.

Chili Dog Casserole I

Reviewed: Sep. 23, 2005
This was really good...and a really good source of heartburn! But, what great chili dog isn't? I followed suggestions and toasted the buns first. Used 2 cans of Hormel chili and it turned out perfectly. My hubby wanted the leftovers for lunch the next day.

Lemon Gold Cake

Reviewed: Feb. 22, 2009
We love this cake! It certainly would be adaptable with any number of filling/frosting combinations. I made it tonight with a lemon curd filling and buttercream frosting (as naples recommended)...I wasn't happy with the lemon curd recipe that I chose, but the cake is terrific!

Restaurant-Style Coleslaw II

Reviewed: Sep. 27, 2005
A few quick changes made this perfect in our book. I left out the extra milk...the buttermilk was plenty of liquid. I also added just a touch more sugar. Other than that, great!

French Beef Stew

This was a great stew. I added mushrooms, a package of onion soup mix, a little worcestershire sauce, and cut the mustard in half. My family loved it.

To Die For Blueberry Muffins

Reviewed: Oct. 17, 2005
These were awesome. I wasn't crazy about the topping but the family liked it. I added a little vanilla and doubled the blueberries. Came out great. *Update- Cut the temp. back to 375 and these turn out MUCH better.

Baked Pumpkin Bread

Reviewed: Apr. 13, 2006
Loved, loved, LOVED this recipe. Tasted just like my grandma's used to taste! Just for that, I would give it ten stars if I could. The only change I made was to add about a tsp. of vanilla. Excellent recipe for pumpkin bread.

Key West Chicken

Reviewed: May 26, 2007
My family loved this marinade. I doubled the amount just to make sure my chicken was all covered. Grilling gave the chicken a nice caramel color and the chicken was moist and juicy. I marinated for about 4 hours. Will definitely make again!

Bacon Cheddar Chive Muffins

Reviewed: Jul. 25, 2007
These were great with potato soup...also for breakfast...and for snacking in between! I also figured, if you're going to do it, go all the way, so I added more bacon, used melted butter in place of the oil and added more cheese. Wow, these are awesome!

Cherry Cheese Pie I

Reviewed: Sep. 20, 2005
This is the easiest and best tasting no-bake cheesecake recipe I have found. My family loves cheesecakes, but I sometimes don't have time to make one, this one works great. Not that no-bake is any comparison for a good cheesecake, but when you are running short on time, this is really good.

Bacon Ranch Pasta Salad

Reviewed: Aug. 3, 2008
This was really good! I realized when I started that the dressing is a lot like I make my ranch dressing, only instead of 1/2 cup of milk, I use a cup of buttermilk. Then about 1/8 to 1/4 cup of sour cream. Everything else, I kept the same for the dressing. I used halved grape tomatoes instead of 1 whole tomato. My salad is still creamy after about 8 hours. It has wonderful flavor too! Thanks for the recipe!

Sausage Casserole

Reviewed: Sep. 16, 2008
Yummy! This was a great "breakfast for dinner" casserole! The only change I made was to sub ricotta for the cottage cheese. I will definitely try it sometime with the cottage cheese, but I had ricotta, so that's what I used! Keeping this one for sure!

Shredded French Dip

Reviewed: Nov. 19, 2008
Yeah! I made these for my sister's birthday because she loves french dips. She was totally happy with them! I doubled the recipe because between us, our kids and hubbies are big eaters. I also sauteed some onions, green peppers, and mushrooms for the ones that wanted that kind of thing. I buttered and toasted the deli rolls before assembling the sandwiches and after, layered on sliced provolone and stuck under the broiler until the cheese melted. As for the broth...I wanted a clear broth with as little grease as possible. However, I didn't think of making these far enough in advance to stick it in the fridge to solidify. Nor do I have a seperator. I DO have a hand-held mesh strainer (I would guess it's about 2 cup size or so). I placed a coffee filter inside it, placed it over a saucepan, ladled in some broth, and let it strain through. When all of that broth was through and just sludge was left in the bottom of the filter, I changed to a clean coffee filter and repeated. It took about 20 minutes and 10 coffee filters to strain a double batch of the broth, but it was SOOOO worth it. I just placed the saucepan over low heat and let it stay warm while I assembled the sandwiches. I am definitely making these again!

Tortillas I

Reviewed: Dec. 29, 2008
These get a 5 star all the way from us! Hubby is Mexican-American and I HAD to learn to make tortillas for him. This is the recipe I always use! He used to help his grandmother make tortillas, so he was with me the first few times I made these. He taught me that you can use different fats to change the taste of the tortilla, as well. He loves his made with lard (ugh, I know) or cold bacon grease (which is my new favorite!). If you use cold unsalted butter, they have a little bit of a sweet taste and are great for sopapillas (sp?) and sweet fillings. Thanks so much for the recipe!!!!!!!!

Garlic-Cheese Flat Bread

Reviewed: Jan. 19, 2009
This stuff is great! I decided to make this as a side to "Italian Spaghetti Sauce with Meatballs" from this site instead of traditional garlic bread...just to make something a little different. It was sooooo good! I will certainly make this again...as a snack, as a side, as an appie...you name it! We loved it!
