Syracuse Salt Potatoes

I'm from the midwest and had never heard of these. I thought I would give them a try (just because I'm like that!) and was actually quite impressed with the change in the potatoes. One would think that it really wouldn't be more than a salty potato...however, it's not salty. They are creamy and wonderful. I would offer one word of caution. I made the mistake of making them alongside a rather mundane pot roast that I expected to be more flavorful than it was. I would definitely recommend serving them with something with a much bolder flavor. I saw someone said something about them being served with BBQ chicken and I could definitely see that. I would just go with a bolder meat than pot roast with these...they deserve it!

Slow Cooker Beef Au Jus

This is a good recipe for beginning cooks. It is very average in taste and quick to prepare. If you plan on using the "au jus," make sure that your roast has NO FAT on it. Otherwise, you're either going to have to prepare it in advance so that you can refrigerate the liquids to solidify the fat or have a fat separator or something. I probably won't make it again.

Cheesy Beef 'n' Rice

This was average. It wasn't spectacular, but I wasn't expecting it to be, either. I knew my family wouldn't like the carrots, so I subbed green peppers instead. Then it was kind of like my stuffed peppers recipe, only without the diced tomatoes and worcestershire sauce. While we were eating, everyone felt it was missing something and we figured out that it was that we were expecting the taste of the peppers! So next time I'm not in a cooking mood, I'll probably make this again and add another green pepper (I only used 1 this time), a can of diced tomatoes and a splash of worcestershire sauce. I had no problems with the rice cooking or being mushy in the end. The cooking time was good!

Tomato Soup I

I just realized that I have never rated this and have made it many times already! There's not much to say except that it's wonderful! I think the outcome will really depend on the quality of tomatoes that you use, though. So either a good quality canned, or even better, fresh!

Beer Brats

These are pretty good. I made the recipe a while back and forgot to review it. I made it as stated because I had never cooked brats before. They turned out pretty good. No complaints. I'm trying another recipe tomorrow, so I'll see if we like it better! Thanks!

Herbed New Potatoes

These potatoes were soooo good! I had a little extra butter in my mix, added some garlic powder, and used scallions instead of chives (what I had) and halved my new potatoes. They were so, so goooooood!

Marinade for Chicken

This was absolutely, hands down, the best chicken that I have ever grilled! The ONLY change that I made (but it was a critical one, I believe) was to use balsamic instead of red wine vinegar. Everything else, I kept the same. My chicken was a beautiful caramel color, smelled wonderful while cooking, and tasted amazing! I will say, though, that I'm an idiot and didn't look at the serving size and this made WAY too much marinade. I had six HUGE chicken breasts and this was entirely too much for them, so I would scale it back by at least half. I served with Herbed New Potatoes from this site, a green salad with homemade Italian dressing, and Easy Peach Cobbler (also from this site) for dessert. We had a great meal!

Incredibly Easy Chicken and Noodles

I really, really wanted to like this one. My mom was requesting chicken and noodles and I had the ingredients to make this one, so I gave it a go. It was too thin, so I ended up thickening it with cornstarch. It also lacked a LOT in the flavor department. I guess canned soup can only take you SO far. I will keep looking for a chicken and noodle recipe that we all enjoy and probably won't make this one again. Thanks!

Marinated Pork Chops

These were very good. They actually tasted a little like steak. In fact, this marinade would probably be good on steak. I only added a little more garlic than called for, but otherwise kept the marinade as is and used on pork steaks because that's what I had on hand. I'll do this one again, for sure!

Shrimp Fried Rice II

Ehh...this was just ok for us. We weren't wowed with it and we wanted to be. We are a rice loving family and had really high hopes for this, but it fell a little flat. I will see about playing around with it and infusing a little more flavor, but as is, I wouldn't make again.

Mexican Rice II

We're getting there slowly. I'm on the quest of finding the perfect, fluffy mexican rice for my DH who is Mexican-American. His grandmother made the "best rice he's ever had" (of course!) and I'm trying to find something similar. This one was fluffier than others and had great flavor (which from what I understand is supposed to be on the mild side, not strongly flavored). I had no problem getting my rice to brown and puff. I think some people are expecting it to puff like popcorn, and that's not the case. What it does is swell slightly and go from being kind of clear-ish looking to being kind of pearly looking. Good recipe and hubby is getting happier!

Easy Grilled Chicken Teriyaki

This was quick and easy and had good flavor for the few ingredients involved. Since they are so few and one of them is a bottled sauce, I'm sure the outcome will depend entirely on the quality of the sauce, so use one you know is tasty. Chicken stayed fairly moist and had a pretty good flavor, but if your chicken is on the thicker side, I would recommend butterflying it or something because we didn't have a whole lot of flavor throughout.

Chicken Flautas

I will definitely make these again. However, they didn't get a five star from me because I had to add a considerable amount of seasoning to the shredded chicken before I could wrap them (luckily, I tasted it before I began wrapping!). I used half flour tortillas and half corn just to see if we liked one more than the other. We prefered the corn tortillas. Also, instead of putting in the filling and then the cheese and trying to get it all to roll up in the tortillas, I added the shredded cheese to my chicken so that I only had one thing to wrap up. It was much easier and probably less messy this way. It definitely takes a little more garlic, cumin, and onion powder to get the taste right though.

Shrimp and Asparagus

This was okay for us, but not really worth the price of the ingredients. It is certainly a good starting place, but it needs some playing around with. I would start with (like others have said) significantly reducing the oil/butter amounts. I also sauteed my asparagus and mushrooms just because we like them better (texturally and flavor-wise) cooked that way. Next time I will probably add some herbs...maybe a little basil or thyme. It's really not a bad recipe, it just needs a few tweaks.

Cheddar Bacon Hamburgers

These were great burgers. I didn't have any problems with them falling apart. I did make sure to use REAL bacon because I'm a bacon purist (!) and mixed everything together very well. The second time I made these, in place of the worcestershire sauce, I used some steak sauce and they were even better! And we love cheese, so in addition to the cheese in the mix, I placed a slice of sharp cheddar on top of the burgers right before I pulled them off the grill and they were awesome!

Gourmet Mushroom Risotto

Ahhh...this was heavenly. I love risotto, and this was just perfect. I didn't change a thing (I don't think!). I'm sure I added a little garlic, but this recipe is perfect as is!

Bagel and Cheese Bake

This was just ok for us. The idea is good, but I think it gets lost somewhere in the baking. I was thinking it would be like a sandwich in a casserole...it wasn't. I doubt if I make this again. I think the bagels kind of ruined this one.

These were ok. They were edible, but not exceptional. I ended up adding a lot of this and a little of that before I put it in front of my family, so it was very ho-hum to start with. Probably won't make again.

This was just average for us. I didn't make any changes, as we wanted to try it as it was written. It wasn't bad...it wasn't bland. It just wasn't more than average. I've been trying new marinades lately and this one probably won't make it into regular rotation. Sorry!
