Hamburger Soup II

Reviewed: Jan. 8, 2009
Ok...a 4-ish before a few additions. Certainly has potential to be 5! I made a few small changes in the beginning...I didn't have large potatoes, I had small yukon golds, so I just added enough to look like 2 large (lol)...and I cubed them. I diced the onions instead of slicing them because it's easier to get my kids to eat them that way. I also used corn instead of peas, beef broth instead of water, added a can of diced tomatoes, and lots of garlic. I cooked it in the crock on low for about 8 hours. Tasted it. It was pretty bland. I added more beef bouillion granules, more fresh ground pepper, about 1/2 tsp. Italian seasoning, and a couple small pinches of cayenne. Oh, and more garlic. Put the crockpot on warm and let it "stew" until my bread was finished (about 40 minutes). The end result was AWESOME! My kids and hubby were eating like uncivilized heathens! I had to remind the girls a couple of times to use their table manners. It was that good! I'm definitely adding the recipe with changes to my rotation! Thanks!

Savory Cheddar Bread

Reviewed: Jan. 8, 2009
This was actually very good. It reminded me somewhat of the cheddar bay biscuits from Red Lobster. I halved the sugar because I'm not fond of sweet/savory bread. I also used Italian seasoning instead of oregano because that's what I had. My family really enjoyed it, so I'll be making it again. Thanks!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 7, 2009
Well, this WAS a good recipe. It did happen to be a *wee* bit salty, but that's certainly an easy thing to fix. I followed the recipe exactly (strange, I know) except for only using one 5-ish pound chicken. I did make the mistake of letting it go all the way to 180 and it was slightly dry. Next time, I will pull it out sooner. Otherwise, great recipe! Thanks!

Slow Cooker Lasagna

Reviewed: Jan. 5, 2009
Hmmm..well, this is middle of the road for me. It is a good idea for a quick and simple way to make a "mock-sagna." That said, I had some issues. I read the reviews and saw where many had issues with gummy noodles, so I wanted to try to fix that. Also, my family doesn't like sausage in their lasagna, so I used burger...about 1 1/2 lbs. Oh, and I am one of those people that doesn't like ricotta in my lasagna, so I used cottage cheese. So, burger, 1 box of bowtie noodles, 2 jars of sauce, 1 container of cottage cheese, parsley, and the mozzarella. Now, I figured I would cook it for about 3 hours on low. It looked good. It smelled good. It even mostly tasted ok (for being jarred sauce and all). Still had gummy noodles...like really gummy. And, heaven help me for saying this, too much cheese! I love cheese...I do! But between the gumminess of the noodles and the amount of cheese, this was bordering on a really bad texture for me. Being the way that I am, I'll probably try this again just to see if I can catch it before the noodles get gummy (and cut back the cheese a little...sigh). It's a great idea! It just needs some tweaking!

Shrimp Scampi Bake

Reviewed: Dec. 29, 2008
Yummy! To me it was easier than making on the stove and the shrimp were firmer (which is how we like them). I will make this way from now on. Thanks!

Garlic Butter Shrimp

It's pretty lemony. Very basic but easy to follow recipe. That's why I used it. My 7yo made this basically by herself and was so proud! She followed it herself (with my help...lol). Thanks for posting!

Graham Cracker Cream Pie

Reviewed: Dec. 29, 2008
This is an old standby. I usually get 2 pies out of this, though. With regards to the runniness, the beating does affect it. You have to beat it for a good 2-3 minutes. I also cut the milk to just shy of 2 cups per box of pudding. Other than that, this is totally versatile and yummy!

Hubby loved these. I'm not crazy about fruit pie, but was pretty pleased with these. You could use many fillings here and it's sooo easy!

Graham Cracker Crust I

I love this recipe! And I use it often. It's easy to customize (using different cookies/flavorings) and it is so easy! I definitely recommend! Much better to make it yourself than buy a premade one!

Banana Cream Pie III

Reviewed: Dec. 29, 2008
This is such a simple recipe, but very good. I usually use a graham cracker crust or the nilla wafer one. I believe there is a shortbread prepared crust that would be good, as well. This is as simple as it gets with tasty results!

Strawberry Torte

Oh my goodness! This was the "non-chocolate" dessert that I made for Christmas dinner. It was heavenly! My hubby (the choco-holic) actually ate more of this than the chocolate dessert! I am definitely adding this to my dessert file! Thanks!

Bacon-Wrapped Chicken

Reviewed: Dec. 29, 2008
I have to tell you, while not exactly a figure-friendly recipe, it is certainly tummy-friendly! I received RAVES over this and it's so simple! I used chive and onion cream cheese, so I left out the chiles and I don't use seasoned salt, just plain old kosher salt. My family loves this and would eat it often if I could bring myself to make it more than once in a blue moon. It's RICH...but good!
