Chef John's Banana Bread

Seriously best banana bread EVER!!!! I have made many and none compare to this recipe. The only thing I do different is no nuts, I don't think it needs it. People that I make this bread for are always asking for the recipe...I have probably shared this recipe over 20+ times.

Chocolate Cheesecake

I followed this recipe almost exactly. Instead of using all regular cream cheese, I used 1 regular, and two fat free. And for my crust since I don't care for graham crackers I used Nilla wafers, this is also because I made them into mini cheesecakes using paper cupcake liners. I baked them for 17 minutes at 350 and they came out great. They were delicious. I also topped them with some cherry pie filling for added yumminess. I am taking them to a baby shower today.

Gramma Brown's Corn Chowder

Ok so following many others I did what was suggested. I browned my bacon first, then removed from pot and saved for the end. I then browned my onions and celery also using a few dashes of garlic powder(or fresh if on hand). I then added my stock after about five minutes and then proceeded with the potatoes and carrots and a can of creamed corn, I let this boil for a bit and another burner warmed up about a cup and a half of half n half. Once I added my cream I then added about a cup of frozen corn as I think it has a much better flavour than canned. And to thicken I did not use a roux but instead keep these perfect little portioned packages of dehydrated mashed potatoes(the kind you would add your butter and milk too...) I find these are a much better thickener and have the yummy taste of potatoes as opposed of a floury taste. I seasoned with some crushed black pepper as it did not need salt. Perfect!!

Caesar Salad Supreme

Wow!! Finally a homemade dressing that I am in love with. I only changed a few things...I didn't use anchovies as I didn't have any and not sure they will ever cross my door. I also used a little less mayo(just 1/2 cup). I bumped up the worcestershire to a tablespoon as well as the dijon. Overall great flavour, didn't need to use the blender. Just used a whisk. This ones a keeper :)

Basil Tomato Soup

I made this soup last nite and it was really good. I added some sauteed onions, finely chopped and also sauteed some garlic. I used milk instead of cream and added 3-4 tbsp of sugar. I also didn't have fresh basil so I used dry, about 2 tbsp. I also cut the butter way down. I think I only used about 2 tbsp. And at the very end I added about 1/2 cup of crumbled feta. It was a very good soup that even got a thumbs up from one of my toughest critics, my husband.
