Ukrainian Red Borscht Soup

I didn't find this recipe to stand out much. The flavor is just okay. I added more salt, balsamic vinegar, and thyme to try to add some flavor, and it was good, but probably not something I'll make again... unless I just have to use up some beets.

Zucchini Risotto

We loved the flavor, and it was so filling! I added a lot more zucchini - 1 medium and one small - and thought it was great that way. I didn't slice it that thin with a peeler, but really liked the thicker pieces. Also added about 1/4 c cream. Delicious!

Acorn Squash with Apple

yummy! i also added cranberries and some cloves. what a great side dish for a fall meal! without the microwave, it takes about 10-15 minutes to get just right in a cast-iron skillet.

The Best Vegetarian Chili in the World

WAY too much chili powder! It was tasting good until I added that, but now the whole thing just tastes like chili powder. I would also add some more tomatoes and more onion. I'd use less salt, too.

Red Cabbage Salad II

Yummy, but I would say it's most flavorful when it's fresh, not after sitting in the refrigerator. My second crew of tastees felt like it got too mushy sitting in the fridge. I added shredded carrots as well. it's so colorful!

Good 100% Whole Wheat Bread

I didn't have dry powdered milk, so I did 1/4 cup milk with 1 cup water. I melted the butter in the water and milk, then whisked it all into the mixed dry ingredients by hand. Without a bread machine, I found 35 minutes at 350 to be just right. Also remember to grease and dust your bread pan with flour so it comes out of the pan perfectly! I agree with one hour to rise, then knead and one more hour to rise in the bread pan. Mmm! This bread is light and delicious, and perfect for sandwiches since it isn't too sweet (no honey). I loved it hot out of the oven, drizzled with olive oil. :) The best wheat bread I've made! P.S. After having made this bread several times now, I have two last comments: if you're baking with a regular bread pan, I would up the "servings" to 16 to get sandwich-sized slices. I've also tried 100% whole wheat as compared to half-and-half, and I prefer using some white flour. It comes out so much fluffier! It's still our favorite weekly bread!

Buttery Corn Bread

This is a very tasty recipe and lives up to the reviews describing it as fluffy, but we felt that it was so sweet and included so little corn meal that it was more like a cake or dessert, not your traditional corn bread. I would cut the sugar by half!
