Navy Bean Soup I

I made this today and was surprised how quickly it cooked. I did not pre-soak the beans, and it was done in 3 1/2 hours. I sauted the onions, garlic and ham first with non-fat spray, plus added carrots. Used half vegetable broth and half water, plus the chicken bullion. Did not add salt, bay leaf, or parsley. Did add a little cayanne pepper. I was skeptical of the tomatos since they are not my favorite thing in soup, but they are really good. It does not turn it into a "tomato based soup" if you know what I mean, they are just a nice addition.

Best Ever Split Pea

I made this with all green split peas and used 7 cups of vegetable broth instead of 8 (4 14oz. cans) I added the last can after it was done cooking. It was very good and I can't wait to make it again!

Marinade for Chicken

Very good! I put my chicken breasts in the marinade on Thursday night and we ate them camping on Friday and Saturday nights. Everyone loved it so much that we had it AGAIN on Sunday night when we got home with leftover marinade I had left in the fridge. Those chicken breasts I only marinated for 30 minutes and it was just as yummy. I used only 1/2 cup of oil to try to cut the second time I made this and there was no noticable difference!

Halibut Dijonaise

This was fantastic! We're on a low cholestoral/fat diet, so I made a few adjustments. I used fat-free plain yougurt in place of the mayo; made my own breadcrumbs with whole wheat bread in the food processor; omitted the butter; and used just a small sprinkle of cheese on the top. I cooked it at about 390 for 18 minutes. It was perfect. The sauce also goes well on the plate next to the fish, just be sure not to contaminate it when your coating the fish. Oh, I coated the filets on all sides with the sauce, then the breadcrumbs, then sprinkled the cheese. Served it with broiled tomatoes and broccoli. Seriously, yum!

Summer Nights Eggplants

I made this recipe with the filling from "Lamb and Feta Peppers" from this site. I really just wanted to comment on the baking time...I recommend baking them for 30 minutes, covered. Then uncover, add any cheese or extra sauce and cook for an additional 10 minutes. The eggplant shells will be perfectly cooked.

Shrimp and Feta Cheese Pasta

As suggested by a few others, I changed a few things. I added a tablespoon of butter to the wine/oil. I used about 1/2 can of Trader Joe's fire roasted diced tomatoes. And I added one pound of asparagus, cut into one inch pieces. I also used Mediterranean spiced feta. Make sure you toss and serve it right away, it's not as good when it starts to get cold. It does look really nice with the asparagus adding some color. Also, I purchased all of the ingredients at Trader Joe's and it was much less expensive than a large grocery store.

Busy Night Turkey Taco Soup with Avocado Cream

I have been making this soup every week since Thanksgiving! I love it! I usually leave out any meat and just add whatever veggies I have on hand, frozen or fresh. With the chicken broth and salsa base, you can pretty much do whatever you want to it! Yum!

Crunchy Green Bean Casserole

This is ok. I recommend chopping the water chesnuts rather small, otherwise they don't fit very well. They also make it a bit watery in my opinion.

Chicken and Artichokes

This was good, but next time I will leave out the paprkia and add more of the other spices. I like the taste, but the paprika makes the juice look like it is full of oil when it's cooking and look bad on the plate. Just a preference. But still a good dish.

Romantic Chicken with Artichokes and Mushrooms

I served this over spagetti which I tossed with a little olive and parsely flakes before putting it on the plates. Then I sprinkled a little parmesan cheese and chopped tomotoes on the top for some color. Everyone liked it.

Creamy Pesto Shrimp

Yummy! I added steamed asparagus broken into about 1 1/2 inch pieces. The green added a lot to the presentation. I don't think I would have liked how it looked without it. But the sauce was awesome!I cooked the asparagus and shrimp ahead of time so it was super quick after everyone got home. I served it with a green salad and crusty bread. Very good!

Spinach Lasagna III

I made this ahead and froze it, uncooked to take on a skiing weekend. I put it in a cooler for the 5 hour car trip, then in the fridge when we arrived. Defrosted on the counter the next day and baked it that night.. It was awesome!! Everyone loved it! Very highly recommended.I cooked a whole bag of fresh baby spinach, but it didn't seem like enought, so I added a 10 oz. box of frozen chopped spinach as well. Next time I will just use two boxes of frozen to make it easier.

Lamb Feta Peppers

This was great! I added the lamb to the onion mixture and browned it; removed from heat, and folded in the feta. I used garlic and herb feta. I also used tomato soup instead of tomato sauce. There is already sugar in the soup, so I just added the lemon juice. Then baked for 30 minutes with foil cover and 15 min uncovered. The were wonderful!! Thank you! btw, I used yellow, orange, and green peppers...they worked great! I've also made this with eggplants instead of peppers...it's excellent as well. (do everything the same, just use eggplants instead)

Artichoke & Spinach Dip Restaurant Style

This turned out wonderfully, but I did make some adjustments...I used three jars of marinated artichokes (about 18oz I think) and the whole package of cream cheese. Also, I only used half of the spinach, and not quite all the alfredo sauce. I brolied it a few minutes on high at the end to make the top nice and pretty. I added some chopped tomatoes to the top for garnish. Served with tortilla chips. It got rave reviews.

Chicken Danielle

Everyone really liked this! I used "chicken tenders" (pre-sliced chicken breasts) and it turned out great. I thought it was obvious that I used condensed soup, but everyone really loved it, so I guess it didn't matter! Thanks! I'm sure I will make this again!

Jim Kaczmarek's Chili

I made this for Monday Night Football and it was a hit! (As were the Ravens!!!) I did use 3.8lbs of ground beef instead of chuck (just because we like it that way) and at the end I added an extra can of "Zesty Chili Beans" with the pintos. The beer made it great. This one's a keeper!

Key West Penne

I like all the stuff in this recipe, but I think it gets too liquidy. Plus, it makes A LOT! It's easy to scale to the size of your party. My advice is to be careful with the heavy cream. Also, I buy the frozen shrimp (no-tail) and scallops. They work great, don't be afraid to try them!
