Gravy Baked Pork Chops

I have been making this dish for years and always add more spice/flavouring. Add: 1 chopped onion; dash Worcestershire sauce, Black Pepper; and if you like more of a kick…. add a 1-2 shakes of red pepper flakes or Cayenne. I do not use mik, and only add 1/4 cup of water because I like a thicker sauce. Also do not add any salt, if using regular soup. Last time I made this, I added 8 oz fresh mushrooms & 1/3 cup chopped Sun Dried tomatoes (dried). The Sun Dried tomatoes added a warm color. Delish! PS - Be sure to remove most of the fat from the chops before cooking. Leftovers are great, heated up.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was so easy to make. I used (green) spinach fettuccini, both red and yellow pepper, and used cooking cream instead of Sour Cream (didn't have any). For real flavor, grate your own Parmesan Cheese and don't add any salt. I included 2 shakes of cayenne pepper which added to the mildly spicy kick. Mmmmm. I didn't add any meat, but may add mushrooms the next time I make this.

Indian-Style Rice with Cashews, Raisins and Turmeric

Very good. After reading other reviews, I increased spices. Increased Tumeric to 1/3 tsp , added 1/4 tsp Curry powder, 2 tbsp onion, two shakes Cayenne powder (had no pepper flakes) and a shake of Cinnamon. I didn't have Cashew nuts so tried Walnut but not keen, so used Salted Peanuts which worked well. Raisins are a must.

King Crab Appetizers

After reading the reviews, I used Phyllo Cups, added a little garlic, dash cayenne, doubled the green onions and crabmeat. Also had leftover chive/onion cream cheese, so use half of that mixed with low-fat cream cheese. These were a big hit with my friends. I had some leftover filling, which I baked and served as a hot dip and served with crackers.

Chicken Marsala

I really liked this recipe and it was easy to prepare in advance. I used cooking Sherry and Marsala Wine which I had in my cupboard. I doubled the sauce and mushrooms, adding 1/4 cup of stock, 1/4 Half & Half and some cornstarch to thicken. I used less salt, used Italian Seasoning instead of Oregano (didn't have any). I browned the chicken lightly, placed in casserole dish with the sauce and refrigerated for several hours. Cooked in covered dish in oven at 350F for 40 minutes. Then switched oven off until ready to serve - with rice and green beans.

Soldiers Kisses

These were delicious...and so easy to make if you have a good mixer to beat the egg whites. I only used 1 cup chopped nuts and needed two cookie sheets to cook them all at the same time. Some were chewy than others, but they all came out perfect. Left them in the oven for about 10 minute after cooking with the oven off (electric oven). Will definitely make them again.

Pumpkin Soup

I made this soup with a few tiny modifications and it was EXCELLENT! So very tasty. Added garlic to vegetables, used half quantity of heavy cream and nutmeg, but added some cinnamon and cumin. .......(2) 3 cloves of Garlic - add to roasting pan with pumpkin and carrots and flavour with your favourite seasoned sea salt; ......(4) After cooking potato in bouillon, add pumpkin, carrots and garlic mixture and allow flavours to mix. Let cool to warm.......(5) Add mixture to blender to blend. I like my soup with bits, so did not puree. Return to pot, add 1/2 cup heavy cream, 1/2 tsp nutmeg, 1/2 tps cinnamon and a dash of cumin.

Butternut and Acorn Squash Soup

I could not find any Squash so I used pumpkin and following the recipe. I put 2 shakes of Cinnamon (too much) - next time I will give one shake. Also found 1/3 cup brown sugar was too much, so will use 1/4 cup (or less) next time I make this. Overall, it was easy to make, and recommend the recipe.

Basic Pesto Sauce

This was excellent but I made a few modifications. Used 1 cup walnuts + 1/4 cup pine nuts - I toasted the nuts before adding them to the mixture. It definitely needed salt, so I added 1/8 to 1/4 tsp of "Johnny's Seasoned Sea Salt". Delicious!!!!
