Chef John's Italian Meatballs

These were awesome! Forgot to add the milk, and didn't think they were dry. Did pan fry them, which reduces the fat slightly. Baked them with gnocchi covered with 1 jar sauce, 1 C mozz cheese, parm, and sliced fontina, about 3 oz. Baked at 350 degrees x 30 min. Great!!

Coconut (Haupia) and Chocolate Pie

This was very good, and easy too. I used a graham cracker crust to help save time, and added 1 tsp coconut flavoring to the white layer, after it had cooled. My family says it reminds them of an Almond Joy. I have made this many times and it always turns out well. Thanks for the great recipe!

Chocolate Zucchini Cake I

I increased the cinnamon to 3/4 - 1 tsp, and switched to 1/8 tsp each of ginger and nutmeg instead of cloves. I also added 1 square of melted unsweetened chocolate. I add the 1/4 cup choc chips to batter. I sprinkled another 1/2 Cup of chips to the top of cake along with the ground walnuts. Yumm!!

Holiday Brie en Croute

Made to take to a party, it went over pretty well, especially with people who like brie. Was very easy, and went together pretty fast. I used 6 sheets of phyllo ( I had this on hand) and spread each layer with melted butter. I folded them up together all at once, like a calzone, and folding the edges together at the sides. My brie was smaller the the one called for in the recipe. Think the larger one would be better. Soaked the cranberries first in triple sec. Very good.

Country Breakfast Casserole

This was Yummy! I reserved my pan drippings from the sausage and used it to fry 1 chopped onion ( I didn't have green onions). I also substituted 1 - 32 oz pkg southern style hash browns instead of the bread. Make sure to fry these in the remaining drippings, and season well with salt and pepper. Works well to thaw sausage and potatoes the night before. This took a few more minutes to cook (50 total ), maybe because no bread to soak up the moisture? My family loved it! Will definitely make this again.

Sour Cream Apple Pie Deluxe

This was the most awesome pie! I got so many compliments, and requests for the recipe the first time I made t. I used half golden delicious and half granny smith. I used more than the 2 C of apples per pie, as I had a deep dish pie crust. I used closer to 3.5 to 4 C apples total per pie, but kept everything else the same. Not too sweet at all. This one I will make again.

OMG! These are so easy, and quick to fix. I try to have a box of cake mix on hand, so I can mix these up if I need to for a potluck, or a special dessert
