Iced Pumpkin Cookies

One word "heaven"!! If you are a pumpkin fan, you have to try this recipe!! I followed the recipe exactly except like other reviewers suggested I used brown sugar and regular sugar in the mix.

Roasted Vegetable Lasagna

This was delicious! I am cutting back on my meat consumption and was craving lasagna. The roasted veggies gave this a unique taste. I followed the recipe exactly as written. I used fresh basil, added a sauted oinion the the pasta sauce, and used a real egg. I will be making th again. My 3 year old and my husband loved it. Next time I think I may roast my red peppers by themselves and peel the skin off after roasting.

Addictive Sweet Potato Burritos

These were so good!! We are vegetarians Monday thru Friday. This was a big hit! I loved them. I used black beans and added a can of sweet corn to the mix. I also only used about 3/4 cup of water instead of the 2 cups that the recipe called for. I topped them with salsa. I left the cheese out and glad that I did. They were good without it and I do not need the extra calories I would have added. I cannot wait to have the leftoves for lunch tomorrow.

Lime Chicken Soft Tacos

Just okay. The chicken seemed really bland. Nothing to write home about. I would like to try it again but in the crockpot like someone else mentioned. I think that will help the flavor of the chicken. I added more lime juice and a splash of Tequila.

Spicy Haddock

This was a huge hit with my hubby. We love spicy!! I followed the recipe exactly except I did not have a can of chopped chilies so I chopped a few Serrano peppers. Will definitely be making this again and again. My husband even asked if we could have it again tomorrow night.

Coconut Curry Tofu

Awesome tofu recipe. I needed something quick for dinner and this was a big hit with my husband. I didn't have any green onion so I used a half of a sweet onion. I used 1 tsp of brown sugar (Splenda) instead of only 1/2 tsp. I only used the 3 tablespoons of soy sauce in step number 2, after letting it boil I didn't feel that it need anymore. I didn't have any bok choy so I used fresh bag of spinach. This will be a weekly dish in our home and I can't wait to eat the leftovers for lunch tomorrow.

Asparagus Soup in Seconds

AWESOME!! So easy and yummy!! My husband loves it and asks for it several times a week. The only thing I do different is add hot peppers with the asparagus in the blender and do not add milk to keep the recipe low carb.

Quinoa and Black Beans

I thought this dish was just "ok". Kinda bland for my taste. I have never eaten Quinoa before so maybe I just didn't know what to expect. My 3 year old son loved it!! I made it with chicken broth instead of veggie broth, only one can of black beans, leftover roasted chicken cubed and I doubled the cayenne pepper. This recipe however has great potential! I plan to make it again, but add more spices and more veggies. I will double the spices and add a can of tomatoes with jalapenos undrained, red bell pepper and I thought it needed more cilantro. My husband and I love spicy spicy food so I will definitly kick it up a few more notches, maybe add some red pepper flakes.
