I thought this dish was just "ok". Kinda bland for my taste. I have never eaten Quinoa before so maybe I just didn't know what to expect. My 3 year old son loved it!! I made it with chicken broth instead of veggie broth, only one can of black beans, leftover roasted chicken cubed and I doubled the cayenne pepper. This recipe however has great potential! I plan to make it again, but add more spices and more veggies. I will double the spices and add a can of tomatoes with jalapenos undrained, red bell pepper and I thought it needed more cilantro. My husband and I love spicy spicy food so I will definitly kick it up a few more notches, maybe add some red pepper flakes.
