Carrot Rice

Spicy Bok Choy in Garlic Sauce

I've never made bok choy as a stand-alone dish, but this was really yummy! Omitted the pepper,and was still too spicy for my little one - but perfect for the adults. Thanks for a yummy way to eat greens!

Praline Biscuits

Very quick. Very easy. My muffin tins over-flowed with the average-sized pan. I would make these again as a quick weekend breakfast at home, but not for dinner or gifts. Enjoyed trying them, though.

Shrimp Bisque II

This is AMAZING! After reading the reviews, I mistakenly thought, that since it was going involve so much work, that I would triple the recipe. All-day ordeal! But, I can only imagine what that quantity would have cost, with a very similar flavor, from the restaurant I always order it from. If it is your first time making it, perhaps go the opposite way & reduce the recipe so you'll be prepared for the next time. Also, I made one batch on the side with veg stock (Kitchen Basics brand!) for a friend, and I couldn't taste a bit of difference, in the end. DELICIOUS! ...TIP!!!: consider getting a CHEAP mesh strainer, if you can find one. Three days later, and I'm still trying to pick/brush/spray all of the shrimp shell mixture out of my fine mesh strainer!

Sausage Smothered in Red Cabbage

My husband would rate it a 3, but I'm giving this a 5. My 4 year old and I loved it! My only change was to save cleaning a saute pan, so I cooked the onion in butter until golden, first, and then threw in the cabbage and other ingredients. Use lean, turkey sausage, and this is one easy, healthy dish!

Dill Lemon Chicken Pasta Salad

Good and a snap to make. I scaled to 4 servings, and used regular ziti, with the juice of 1 lemon, and the zest of 2 lemons. I really increased the dill for flavor. Will make again!

Fish Chowder II

Wish I had read the reviews, first. The flavor was good, but I wish I had poured out the water after cooking the potatoes, and only used milk. Chunkier soup is our preference. The cayenne seems like a great idea, too, so I will give that a whirl next time. This was a really good soup to be so easy!

Cavatelli and Broccoli

Very healthy. If I make this again, I won't follow the steps here. I'll just cook up some garlic and red pepper in olive oil, and toss it with cooked pasta that I've thrown broccoli into for the last 3-4 minutes of the pasta's recommended cooking time. Adding some spices, or cooking the pasta and broccoli with chicken stock may add some flavor.

Butternut Squash Soup

I made the terrible mistake of forgetting about the reviewers' advice by the time I made this soup, and ended up dumping it down the disposal. This is cream cheese soup with butternut squash coloring, and I'm usually a girl who can eat cream cheese by the spoonful. If I ever attempt any butternut squash soup recipe again, I will use one that doesn't even have cream cheese in the ingredients list. Thanks for the opportunity to try it, though. Shame on me for not following the great advice!

Easiest Mushroom Sauce

First try at mushroom sauce/gravy, and this was a piece of cake! For ease, I changed the servings to 8... used an 8 oz. pkg mushrooms, and 1 can beef broth, as well as other altered quantities. Yummy over roasted green beans (GB's tossed with a splash of olive oil, S & P, and oven roasted till shriveled and brown) and turkey!

Peanut Butter Cup Brownies

Yummy! I went with 2 eggs and a little extra oil for a moister brownie. A friend shared a similar idea, which is chocolate chip cookie dough, prepared the same way, only with snack-sized Reese's (a tad smaller than the regular ones... the ones I buy come 15 to a bag) shoved in halfway through. Both ideas are fantastic!

Green Tomato Pasta Toss

This was a unique blend of flavors, and I would probably make it again if I had more green tomatoes I needed to use. For the leftovers, I added some garlic salt, goat cheese, and a dash of balsamic vinegar for a little more flavor. This made a very affordable main dish!

Chicken Parmigiana

I'm guessing chicken parmigiana is usually fried, but it was still good this way, especially if you're eating healthy. I made extra chicken to serve on toasted bakery buns for chicken parmigiana sandwiches.

Coconut Curry Fish

Going heavy on the spices gives this dish a little more flavor, and even with all of the garlic, some serious garlic salt helped quite a bit, too. In the end, this is a quick complete meal, although hubby would probably rate it a 2 or 3. I don't have much experience with cornstarch, but I couldn't get it to blend in. Once it got piled on the plate, DH didn't notice the lumps, though.

Pork Chops with Peach Picante Sauce

I picked up a very similar recipe from Publix Apron's collection. That recipe calls for grilling the pork, and hubby's not up for grilling. I needed tips for cooking the meat indoors, since I don't have much experience with pork. This method made preparation easier. Publix suggests serving it with a tomato salad: sliced tomatoes, with cilantro-herb paste (I just chop fresh cilantro), feta, and balsamic vinaigrette. Yummy meal!

Artichoke Spinach Lasagna

It's nothing like old-fashioned, fattening lasagna, but to be so healthy, this is scrumptious. I omitted nearly all cheese except for a few sprinkles of lite-mozz on top for eye appeal. No-bake noodles rock; just work quickly so they don't start to curl before you finish layering or pop in the oven.

Batman's Best Caesar Dressing

This had a decent flavor, but I don't prefer it over store bought (I use Ken's). For the time, cost, and flavor, I'll stick with bottled Caesar, unless I don't have any on hand. I would give this recipe another go if I happened to be in a crunch.

Mashed Sweet Potatoes

Good flavor. I recommend adding all of the ingredients little by little to taste, because I'm sure I used quite a bit less, and simply stopped adding when it got too sweet/mushy/buttery for me. A teeny dash of cinnamon is great in it, too.

Broccoli Slaw

Delicious! The store didn't have the slaw mix, but I used one bunch of broccoli and 1 grated carrot, and was pleased. For the dressing, I mixed equal amounts of low-fat mayo and sour cream, a squirt of mustard, splashes of lemon juice and vinegar, plus a lot of celery salt and some seasoning salt. Very enjoyable, and even better after it sits overnight.
