Healthy Banana Cookies

I used dried apricots because I didn't have dates and spiced rum instead of vanilla. I also added about 1 cup pumpkin, 2 T raw honey, 2 T flax seed, 1/2 t cinnamon and fresh grated nutmeg. I cut the oil in half because I added pumpkin. I am excited to try different fruits, nuts and chocolate next time and use applesauce for the oil. Great easy and healthy recipe and fun to modify! They came out great. I love that there is no salt in the recipe too!

Simple Scones

Excellent recipe. I used agave nectar (1/6 cup) for the sugar and 1 cup whole wheat and 1 cup + 2T whole spelt flours. Greek yogurt works great instead of sour cream. Plus I added cinnamon. Yummy!

Best Bread Machine Bread

I love this recipe. I set my bread machine to dough setting and split the dough in two and allow it to rise in a warm place (on preheating oven with a warm damp towel over it) for 30 minutes. Then I cut a long slit in the top and stuff with 1 tablespoon butter per another review. I bake at 350 for about 20 minutes and it is so moist and delicious. I have tried experimenting with the flour: 2 cups bread + 1 cup whole wheat bread flour 1 cup bread + 1 cup all purpose + 1 cup whole wheat bread + 1 cup juice pulp (carrot, apple, ginger, sweet potato, whatever I juice) and this came out the best so far. I am now baking loaves with 1 1/2 cups bread + 1/2 cup whole rye +1 cup whole wheat bread + 1/8 cup flax meal + 1/8 cup flax seed + 1 cup juice pulp (including beets: the dough is pink!). I love how versatile this bread is and I am enjoying experimenting with the recipe. I should mention I tried it once with all whole wheat bread flour and it was way too dense. I have not figured out how to make a good 100% whole grain bread yet :(
