Avocado Mango Salsa

So yummy! I substituted sweet brown onion for the red onion (as they have been bitter the last few times). It was delicious! Dreaming of making it again.

Watermelon Salsa

Looks so similar to regular salsa, some people were a bit surpised. I wish the watermelon had been more ripe. I used a chipotle hot sauce which gave it a smoky dimension that was good. My nephew asked for the leftovers.

Chocolate Marshmallow Frosting

Smooth, creamy but not too sweet. I piped it onto cupcakes and need another recipes to cover all 24 cupcakes. Probably enough if I'd spread it lightly to cover all of them. Off to make another batch! Delicious! Yum! Yum! I only used 1/8c half & half. Maybe could have used more confectioners' sugar, but didn't want it too sweet.

Calico Bean Soup

I used 10 Bean bulk from Sprouts. Yummy! I put it in the crockpot and let it cook all day. I didn't put the carrots and celery in until about 6 hours til the end (after it was cooking for 4 hours).

Best Moist Chocolate Cake

I made these with butter and did the substitution of baking powder for baking soda and the additional 1/4 c milk. I used chocolate milk as we only had skim regular milk. Really moist and yummy. I cooked them as cupcakes (24 regular size and 12 mini).

Simple Scones

Grating the frozen butter makes these really flaky. Everyone loved them. I did the cranberry-orange for a more festive scone. Yummy! Will make them again.

World's Best Scones! From Scotland to the Savoy to the U.S.

Yummy! Flaky and really moist. Because I made them for Christmas, I added craisins for the currants and zested one orange. Would have been good to put a touch of orange juice in as well but I didn't want to mess up the moisture. Everyone loved them.

Strawberry Spinach Salad I

I made this today for a dinner we were invited to tonight. Everyone loved it. I made the dressing in the morning so it had time for the flavors to develop. I toasted the almonds. Everyone had seconds and a picky 5 year old ate some and enjoyed it too.

Candy-Coated Chocolates Cookie Mix In A Jar

I use this recipe all the time, not for gifts but for the cookie recipe. At Halloween, I use black and orange; at Easter, the pastel mix; at Christmas, the red & green mix; for 4th of July, the red, white & blue; and just because, the plain red, orange, yellow, green, blue, and brown mix. Kids of all ages love them. For a softer cookie, turn in down to 325 degrees and cook slightly longer.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Love this dressing! It's really light and very healthy. I made it with Clementines and Clementine juice instead of oranges. YUM! I also substituted pecans for the walnuts. I didn't have blue cheese so I used Feta. .
