Chicken Tortilla Soup V

I have a tried and true recipe that I use for tortilla soup but I didn't have all the ingredients to make it. So I went in search of another for ideas of how to change things up. SO GLAD I DID!! My family loved it! I did everything pretty much the same but I did use a little oregano. I also didn't have chicken broth so I had to use water and boullion cubes (not my favorite option but it was fine) - and I used 4 cups instead of what the recipe called for. As some other members suggested I added a can I black beans (drained and rinsed). The family loved the flavor and the fact that it was more hearty than my other recipe. Great recipe - thanks so much!

Banana Crumb Muffins

I made this today and they are fab! I used probably 5 mashed bananas (decent size) and didn't change anything else in the recipe. I did spray a little non-stick spray on the muffin pan due to other reviews about messy topping. I'm glad I did because topping spread all over the pan and it was nice and easy to get the muffins out and no sticking for the topping! Yum! Will definitely make again and again! Moist (but not too moist) and delicious!!

Turkey Wraps

Made this for a volleyball tournament (needed some variety for the weekend...lunchmeat on wheat bread gets boring if you have to have it too many days in a row right?!). I had some slight variations. I did not get the cream cheese with chives, I got plain cream cheese because it was on sale. I did not use avocado (I don't like it) or bacon (my daughter didn't want it). I made 1 wrap without the mustard in the cream cheese (for my daughter - she wasn't sure if she would like the dijon) and 2 with the mustard (she ended up liking both). I didn't put as much dijon as the recipe called for and I will definitely do that next time because it really adds a nice flavor to the wrap. I also used a shredded mexican cheese blend because that's what I had on hand. THIS WAS YUMMY and I will definitely make again with the avocado and bacon for the family because I know they will love the actual recipe version. Thank You - we enjoyed!

Spaghetti Salad II

I had to make a pasta salad for a volleyball tournament. My Mom used to make a version of this when I was young so i searched out and found this recipe which was similar to what my Mom used to make. A couple of changes - for various reasons...I used 1 lb. of whole grain spaghetti, did not use any garlic powder (mine was all hard from condensation), and I did not add the paprika (didn't have any) nor did I use sesame or poppy seeds. Next time I make this I will try all of these items in the salad because I think it will add more texture and flavor to the salad. The version my Mom used to make was much more simple and plain but was wonderful too. With that said - the version I made was a big hit with adults and teens alike. I used green onions (matter of preference over red onions) and I used more parmesan to taste (great with more in my opinion). I also used a bit more salad supreme (didn't use seasoning salt) I did NOT use the whole bottle of salad dressing and I'm glad I didn't because I think it would have been too liquidy and create soupy pasta - which I didn't want. I made this the night before as we had to be up and out of the house by 5:00am - and it was fine. I think this salad would be fabulous as is and did not intend to make all these changes - it just happened that way. Thanks for the awesome recipe - it was a big hit.

Cheddar Baked Chicken

Made this last night for my picky teenage daughter and husband. My husband is picky because he is a great cook himself, and often does the cooking in our household. My daughter is picky because she is used to my husband's great cooking. Ok - now on to my review of the actual recipe!! I made this recipe pretty much as is - with a few exceptions. I did not have the cereal so I made it without the cereal. I increased the breadcrumbs to make up for the missing cereal (I just did this by site - not measurements). I used italian seasoned breadcrumbs - rather than plain. I forgot to cut the chicken breasts in half - darn it! So, it took about 45-50 minutes to cook and that was my daughter's 1 complaint - that her chicken was too thick. I did not pound them down at all because they were still a little frozen (next time I'll make sure I do this). Overall - plates were clean and my daughter liked the taste of the chicken. It turned out nice and juicy as most reviewers mentioned. I will try this again. However, next time I will try with the cereal (if I have it) and I will try baking it on a rack to alleviate the wet bottom (although it was very good that way too). Thank you for the recipe - we enjoyed it!

Caroline's Chocolate Fudge Frosting

I love, love this recipe - the frosting rocked! I followed the other reviewers suggestions and used 4 squares of chocolate and 1/2 cup of milk...FABULOUS! My only mistake was not putting this delicious frosting on homemade cupcakes...I used a box (and while it was great and everyone loved the cupcakes) this frosting deserves a more decadent foundation : )...a nice dense, homemade cake or cupcakes (IMO). Thanks You!

Meyer Lemon Martini

My husband and I really liked this recipe. I don't usually add another liqueur into my martinis but I added Triple Sec - it was delicious. The Triple Sec seemed to take a little "edge" off of the meyers and the vodka which was a good thing. In the past I've used Oprah's Lemon Drop Martini recipe but I like this much better! Awesome, will definitely make again! Thank You.

Chilaquiles II

This was very yummy. I'm not sure still if I liked the frying of the tortillas and onions together because some of the onions get browned, which makes them a tad bitter. But, I think that might also add to the flavor so not sure I would want to change it. Also, I didn't have any salsa or Mexican tomato sauce so I used a small can of tomatoes sauce, cut-up a few tomatoes, paprika, chili powder, cumin, about 6-7 slivers of canned jalapeños, less than 1/4 teaspoon of jarred crushed garlic, salt, pepper, 1 tbsp. of butter, and then pulled some of the onions from the tortilla mixture and used those (I was being lazy...I didn't want to cut any more onions) - put all in a saucepan, brought to a boil and then let simmer while preparing the eggs, tortillas etc. I used median blend shredded cheese for topping because I had no jack cheese. I served with a dollop of crema and a few canned jalapeños on the side. My hubby and daughter who are pretty picky, loved it...their plates are clean!! Yummy!

Peppered Shrimp Alfredo

OMG - sooooo yummy! Made as recipe is except I didn't add salt and I'm glad because the Alfredo sauce was salty enough. I also only had a 1/2 lb. Of shrimp so I cut up 1 chicken breast and sauteed with olive oil, salt and pepper separately and then added to recipe when I added shrimp. My 13 year old and very picky hubby both had seconds!! They loved it - and we all loved the spicyness!!

Sky High Yorkshire Pudding

Made these tonight for Christmas dinner (main course was prime rib). They were a hit with everyone! They rose beautiful and everyone was commenting about how cute/pretty they were. I followed some other reviews and let the eggs and milk get to room temp and added salt. The only problem I had was, despite all the oil in the muffin pans some of them stuck to my nonstick pan and were really difficult to get out. I think 25-30 minutes is plent for cooking time (but had an oven that cooked a little unevenly so that might have been the problem). They still tasted and looked great! Thanks for the recipe!

Honey Glazed Ham

I made a spiral sliced ham for Thanksgiving and used this glaze. Everyone raved about how good the ham was. I didn't measure out the cloves - I just used enough to cover the ham in places I thought they should go (evenly spread about the ham). I'll definitely make this again - it was yummy!

Judy's Strawberry Pretzel Salad

This was a huge hit at Thanksgiving this year. We had about 25 people for dinner - and I could hear people saying to each other, "have you tried this?! It's so good". Even people on diets had to go and "try" a little bit. I followed some suggestions from other users and I was happy with outcome. I baked crust only about 12 minutes. I also only used 1 pkg. of cream cheese (rather than 2). I also let the jello and strawberries (I used 2 tubs of strawberries) sit in the fridge for a little bit until semi-set - but don't let it sit too long because then it looks a little "chunky". I'm sure recipe as is would be great too! I'll definitely make this again!

Fluffy French Toast

I love this recipe - easy and tasty. My family loved it too. I was craving banana french toast so I made this recipe and then fried the bananas/warmed them up a bit in the butter I was using to cook the french toast. I placed 1 slice of french toast on plate, then added bananas on top, then put a second slice on top, cut sandwich in 1/2 and then served with syrup and powdered sugar. Delicious! Thanks for this recipe!
