Chicken Tortilla Soup V
I have a tried and true recipe that I use for tortilla soup but I didn't have all the ingredients to make it. So I went in search of another for ideas of how to change things up. SO GLAD I DID!! My family loved it! I did everything pretty much the same but I did use a little oregano. I also didn't have chicken broth so I had to use water and boullion cubes (not my favorite option but it was fine) - and I used 4 cups instead of what the recipe called for. As some other members suggested I added a can I black beans (drained and rinsed). The family loved the flavor and the fact that it was more hearty than my other recipe. Great recipe - thanks so much!

Banana Crumb Muffins
I made this today and they are fab! I used probably 5 mashed bananas (decent size) and didn't change anything else in the recipe. I did spray a little non-stick spray on the muffin pan due to other reviews about messy topping. I'm glad I did because topping spread all over the pan and it was nice and easy to get the muffins out and no sticking for the topping! Yum! Will definitely make again and again! Moist (but not too moist) and delicious!!

Turkey Wraps
Made this for a volleyball tournament (needed some variety for the weekend...lunchmeat on wheat bread gets boring if you have to have it too many days in a row right?!). I had some slight variations. I did not get the cream cheese with chives, I got plain cream cheese because it was on sale. I did not use avocado (I don't like it) or bacon (my daughter didn't want it). I made 1 wrap without the mustard in the cream cheese (for my daughter - she wasn't sure if she would like the dijon) and 2 with the mustard (she ended up liking both). I didn't put as much dijon as the recipe called for and I will definitely do that next time because it really adds a nice flavor to the wrap. I also used a shredded mexican cheese blend because that's what I had on hand. THIS WAS YUMMY and I will definitely make again with the avocado and bacon for the family because I know they will love the actual recipe version. Thank You - we enjoyed!
