Savory Slow-Cooked Chicken Cacciatore

I made this recipe exactly, and found it a little bland. I really like the idea of slow cooker cacciatore, so next time I think I'll keep the skin on and brown it nicely, add plenty of salt to the crock pot, and maybe more Italian seasoning. I neglected to cut the spine out of the chicken pieces, and the little bones ended up everywhere, so beware when using bone-in chicken! It was very tender when done, so the chicken was falling off the bone and leaving the rest of the bone in the pot. Not so great for the kiddos eating it. I think with a few tweaks this could be a great recipe.

April's Roasted Red Pepper Cheese Ball

Lovely cheese ball! I have made this several times and almost always someone asks me for the recipe. It makes a very big recipe, so my tip is to make it around the holidays, and divide it into two balls. Then take one to the office party and one to the family or friend get-together. The green parsley and red pepper make a great seasonal combination! Oh, and I always use chopped garlic instead of powdered. I gives it a little extra kick.

Brussels Sprouts in a Sherry Bacon Cream Sauce

Wonderful recipe! I have made this several times now. I brought it to Thanksgiving dinner expecting to have leftovers (my family is a little picky) but they all raved about how delicious they were and went back for seconds. The second time I made it, I strained the bacon out and reserved it, then sprinkled it over the top before serving. I thought that added to the texture.

Pineapple Macadamia Nut Cake

I made this as a non traditional birthday cake for my dad. I love cakes that I don't have to ice! Lots of rum means not for the kids. I threw in a handful of coconut to the batter to amp up the tropical taste. It didn't slice up well, but presentation didn't matter because it tasted great!!

Vegetarian Chickpea Sandwich Filling

This is a great vegetarian dish. I noticed it could be made vegan with veganaise. Great for whatever you have in the fridge veggie wise. I threw in some carrots and green onion instead of celery, and used lime juice instead of lemon because it was around. We ate it on crackers for a quick lunch.

Easy Indian Butter Chicken

Great recipe! My whole family loved it. I combined the lower fat recipe with the one pot version. I couldn't find tikka masala, so I added a little extra garam masala. Watch the sauce closely though, I left to watch a few minutes of football and let it boil. The result was not a creamy, but it still tasted fine. Its a good excuse to make it again soon so I can perfect it!

My family loved this recipe, including my toddler. I made a big batch, so we ate it as leftovers several times. It was great served with simple cornbread, and in wraps. I think I'll drain it a little better next time as the chorizo is pretty greasy. I did leave out the olives and cumin because of our tastes. Overall the taste is amazing, with lots of variety of flavor in each bite!
