Creamy Chipotle Chicken

Wow. This recipe is SO good. Got rave reviews from my boyfriend. I wanted to make enough to have plenty of leftovers so I doubled the recipe for my large crockpot. Had to make some changes for this though (added another cup of chicken broth & a can of cream of mushroom soup). Based on other's reviews I added a can of mushroom and left out the butter. Because my bf and I both love spicy food I added the whole 7.8 oz can of chipotle peppers and sauce. It was spicy & very tasty. :) Thank you for sharing!!

Six Can Chicken Tortilla Soup

I rate this 5 stars but only using other's suggestions. I added spices such as cumin, onion powder, pepper, and cayanne pepper for some much needed heat. I also added minced garlic. In place of canned chicken I shredded store bought roasted chicken (easy & it makes a BIG difference). Use 1 can chicken broth and 2 cans cream of chicken for creamy soup. It was delicious! My boyfriend and roommate LOVED it! They wanted me to make it again the following week. Top with some shredded cheddar and tortilla chips... YUM!

Easy Mushroom Rice

This was delicious! Thank you for sharing. I used a can of cream of mushroom soup (undiluted) in place of the onion soup as one reviewer suggested. I also used chicken broth in place of beef broth. I doubled the amount of mushrooms and also added a can of chopped spinach. I left out the butter. The spinach and mushroom together have a wonderful earthy flavor and using the cream of mushroom soup gave the rice a nice creamy texture. The boyfriend and roommate both liked it very much. I would make this again!

Shrimp Etouffee II

This recipe is great! Thank you for sharing. I made it last night for my family and everyone loved it! Great tasting & easy to make. However I did add much more hot pepper sauce. I also added some Cajun spices, canned diced tomato, and two teaspoons of A1 Steak sauce (I didn't have Worcester sauce). My family and I love spicy foods so if you do too I would recommend the above additions as well! :)
