Delicious Ham and Potato Soup

My mom used to make potato soup with kosher hot dogs or salami and a beef bone . It's a great substitute for ham. Using this recipe as a base, you can substitute any spicy meat or even bacon. Delish!

Overnight Caramel Pecan Rolls

I made this last year and made some minor changes. I used two aluminum throw away pans that I don't throw away. They clean up easily and I can make these in two seperate bakings. When one is baked, I put th other one on top and just turn upside down. All the good gooey stuff goes on top of the other one with no mess. Also, made another 1/2 recipe of the topping which it needed in my opinion. Added white raisins because I love them. Next time I might sprinkle chopped pecans on the bottom instead of whole ones, just like the ones at Panera. They came out delicious. I wonder if we can use some whole wheat flour and soy milk to make a healthier version? With a butter substitute it might be a better way to indulge without dripping in cholesterol. If anyone does try it before I make them again, I'd sure like to know the comparison in texture and flavor.

Overnight Caramel Pecan Rolls

Some added suggestions: I added white raisins to the filling. They add a special texture and taste that my family loves. I baked these in the throw away aluminum pans and added 1/2 again as much syrup, as suggested. When they were done I turned them into another aluminum pan and I didn't have the problem of cleaning any pans at all. Ran the 1st one under the tap immediately and it cleaned up to use again, easily. Also, one set raised only 11 hours and successfully baked and was eaten within a couple of hours. A wonderful Mother's Day present to the family.
