Key Lime Daiquiri Pound Cake

My boyfriend really enjoys key lime pies, so I put this together for him. Great recipe! Reminds me of my grandmother's pound cake, but with a key lime zing. He loved it!

Double Layer Pumpkin Cheesecake

Awesome! Imagine my surprise when my 9-year-old nephew (who never likes ANYTHING) had TWO pieces. I used canned pumpkin and a store-bought crust to save time, but it still came out great!

Wanda's Chicken Noodle Bake

Although we like carrots, it just seemed out of place in the recipe. Next time, I'll probably add more peas and onions and omit the carrots. I didn't have 2 cans of cream of chicken, so I added 1 cream of chicken and 1 cream of mushroom. Good stuff!

Beefy Lentil Vegetable Soup

YUM! I used spicy V8 and and about 1 cup less water for a thicker soup. Made with ground turkey instead of beef and it was still great. Added 3 4.5 oz cans of mushrooms since my guy is a mushroom-lover. Definitely salty enough, but we thought it needed a little something more for our taste. Added some onion powder, garlic powder and cayenne for a little zip. Excellent thick soup made even better with a crusty loaf of bread! For added convenience, make this in the morning and let it cook all day in your slow cooker. Thanks for the recipe!

Easy Mashed Potato and Roasted Vegetable Enchiladas

We are by no means vegetarians, but my fiance absolutely loved it. I've made this twice when we had company and everyone raved! Each time, I've made the mashed potatoes from scratch and used fat free cheese. The second time, I added a small can of green chiles to the mashed potato mixture for a little extra kick. Definitely allow yourself enough prep time, but it's worth it.

Cheeseburger Soup I

Since we're trying to eat healthy, I did everything low-fat: I used 1 lb ground turkey, NO butter (a little olive oil for cooking veggies in the beginning), skim milk, fat free sour cream and fat free shredded cheddar. I was running low on potatoes, so I used about 2 cups of potatoes and made up the rest in sliced mushrooms. Recipe turned out great. I'd make it again! Next time I'll try beef stock as suggested by other users. Thanks for the recipe!

Birthday Bones

I made these up using cat and bone cookie cutters and gave as gifts to all of my family members that have dogs. The cute shapes were a hit! Plus, it was nice to have a simple recipe that would go over well for dogs with allergies and sensitive stomachs. I plan to do this for the holidays every year.

Rempel Family Meatloaf

Awesome! I love the original version here but have tweaked over the years for our family. I use ground turkey (NOT the EXTRA lean kind), which eliminates any grease mentioned in other reviews. I typically use bread crumbs in place of crackers. I add one small diced onion and a can of sliced mushrooms (drained) to the meat mixture. I top with a layer of Sweet Baby Ray's BBQ sauce before popping in the oven. Excellent flavor--you'd never miss the beef! My mother in law happened upon some leftovers in our fridge and ate it for lunch-she said that this was the best meatloaf she ever had! We love the leftovers on sandwiches.

Corn and Zucchini Melody

I fix this without the bacon as a low fat alternative and cooked the veggies in a little olive oil instead. Great with or without a little shredded cheddar sprinkled on the top. This will become a staple side dish. Thanks for the recipe!

Best Brownies

These are fine if you're merely looking for a quick recipe and a sweet fix. They turned out very cake-like and a bit dry (and I even baked for a few minutes LESS than required). My personal preference is a moist, dense, crusty-topped brownie, so I was disappointed. My guy loves brownies and wouldn't touch them after the first piece. Thanks for sharing, but we'll continue to use the "Chewiest Brownie" recipe on this site which better suits our tastes.

Pork Chop Packs

Chewiest Brownies

I've been searching for a CHEWY brownie recipe on this site and finally found it! I mixed in chocolate chunks. I took advice from others and baked in a smaller pan (8x8). Increase cooking time to 45-50 mins. Best the next day! Thanks for the awesome recipe!
