We loved this dish, I didn't drain and rinse the black beans and I left some of the juice from the corn and added a little more salsa. My husband loved it but asked me if I could make it with cornbread on top. I stirred together a Marie Callendar's corn bread mix and poured it over the top (instead of the chips) before baking. I increased the oven temperature to 375 and baked it for 20 minutes, added the remaining grated cheese on top and put it back in until the cheese got bubbly. I would recommend using a little more fluid (water, tomato juice) in the meat mixture when topping it with the cornbread as it tends to soak up some and some is cooked off at the higher temperature. I serve it with sour cream and salsa. It was really good with the sweetness of the cornbread.
