Tomato Soup with Fennel and Dill

We had been eating my Tomato Curry Soup with grilled cheese sandwiches once or twice a month for many months. This was a happy substitute! It's creamier and has different spices, but still has the vegetables to help fill us up.

Slow-Cooker Chicken Tortilla Soup

A hearty soup that doesn't require a side dish. I add a can of low-sodium black beans to help round it out, and I recommend using a plain low-carb wrap sliced and sprinkled with sea salt and lime juice in place of the tortilla strips. We've had this once a month for almost 2 years now!

Baked Chicken Nuggets

My nuggets turn out better than the frozen store-bought ones! Plenty of spices, a hint of parmesan cheese, and whole wheat panko bread crumbs make all the difference.

Mexican Meatloaf

This seemed weird to me at first and we needed a bit of practice with the rolling part, but now this twist on meatloaf is a monthly favorite. I use chipotle refried beans and my own taco seasoning spice blend to give it more kick. I also use ground sirloin, 2% cheese, and two low-carb wraps to help keep it healthy.

Easy Slow Cooker Meatballs

It really is easy! The yellow onion makes all the difference in taste in my opinion. I had done store-bought meatballs in the slow cooker, but wanted a fresher option. They tasted awesome with whole wheat noodles for me and tofu shirataki noodles for diabetic hubby.

Slow Cooker Pepper Steak

I make this meal specifically for my husband when I'm working late because he loves it so much. The peppers hold up well in the slow cooker, and I switch out the bouillon cube for a cup of beef stock.

Coconut Chicken With Pineapple-Pina Colada Dip

The coconut chicken is so flavorful that we don't even make it with the dip. My diabetic husband couldn't believe sugar was not included in addition to the coconut. We've made this about once a month ever since discovering the recipe on Weight Watchers online.

Slow Cooker Beef Stew I

This slow cooker recipe replaced the slow cooker pot roast recipe I found in one of my cookbooks. It has more flavor, and it's easier to prepare. I especially love that the meat, potatoes, and vegetables are already in the slow cooker so I don't have to prepare a side dish.

Pie Crust Made with Pecans

Pecans are much friendlier to diabetics than the traditional graham cracker crusts. It gets a little chewy, but doesn't distract from the pie. We use this on our Thanksgiving pumpkin pie every year, and it would work well with many other types of pies as well.

Homemade Peanut Butter Cups
