Ricotta Cheese Cookies

I'm a little disappointed with these cookies. While they were pretty easy to make, had a nice texture and looked great, the flavor was not what I wanted. Followed the recipe to a T, but even with the glaze they had this bland sort of flavor that I can't quite put my finger on (almost like a scone or biscuit, maybe too much baking powder... not sure). And, yes, I know that Ricotta Cookies are generally not a rich, super sweet cookie. This recipe is OK, but not what I wanted.

Granola Blondies

I liked this a lot as a base recipe to tinker with. This is/can be a great quick morning breakfast. Like others, I reduced the sugar to 3/4 cup, used 2 whole eggs and left out the cranberries (only 'cause I didn't have any) and it came out fine. I only wish I had put it in a 9x13 pan instead of the 9in square. They were a bit too thick (over 1 inch) for my liking. Next time I think I will tweak it to add more/varying flavors - maybe cinnamon and chopped apples or mini chocolate chips and dried cherries... This recipe is a keeper to customize.

Creamy Au Gratin Potatoes

I've made this recipe twice now. It was really good both times, but even better with diced ham added in (about 1 C.) Can't wait to try it with bacon next time. Also, I used onion powder instead of real onions and it still had a good taste. Overall, a definite keeper!

Fluffy Pancakes

These are very tasty, silky soft pancakes! I didn't quite get the tall & fluffy-ness I was hoping for, but that was my fault. I realized my baking powder was expired after my first batch on the griddle turned out thin and tough. I added a little more baking soda, and the rest turned out MUCH better. Despite the flub, the taste and texture were delicious! I will definitely be trying these again with good baking powder.
