Pumpkin Chocolate Chip Muffins

Very good recipe, especially for those weeks before Halloween! I took tips from previous reviews, such as substituting brown for white sugar, and doubling the 3 spices. Instead of mixing choc chips in with the mix, i added a few to the tops of the muffins just before baking them (alternating with chopped walnuts too).

Homemade Tomato Sauce I

Great! Needed alot of salt, but i followed the reviews and added about 1 1/2 tbsp at the 2 hr mark. Added 2 more tbsp of red wine and left out the bay leaf and celery. Great with meatballs and pasta!

Penne with Eggplant

Great recipe! I used 1/2 an eggplant, and also 1/2 a zucchini, the two were great together. Instead of tomato paste, i used 1 cup of tomato/basil sauce (jar) with a bit of cream which I blended together. Overall, a very easy and delicious recipe!

This was an easy recipe. I added more lemon. I used frozen chicken breasts which were difficult to work with, i recommend fresh or recently refrigerated chicken instead!

Strawberry Muffins

Very sweet and delicious! I read previous reviews and added 1/2 tsp vanilla, 1/2 tsp cinnamon and 1/4 cup brown sugar, as well as chopped the strawberries and let them sit for 1 hr before baking. They did need to bake for 10 min longer, however! I topped them (once cool) with an easy lemon glaze (confectioner's sugar, freshly-squeezed lemon juice, and a bit of grated lemon zest)! Perfect muffins.

Italian Cream Cheese and Ricotta Cheesecake

So great! I didnt have a springform pan, so I used non stick spray on a large pyrex pan, worked just as well. Added confectioner's sugar and sliced strawberries and I made sure to refrigerate for 6 hrs before serving. Delicious!

Best Apple Crisp Ever

I made this and then read the reviews. I do agree that its a bit sweet (i would cut down on the sugar) but i found that spraying the pan with a non stick cooking spray before putting the apples in, fixed the issue of having the pastry stick too much. Oerall, simple and tasty!

I made my own tahini and left out the parsley, and this was some of the best hummus i've ever had. A food processor is crucial and extra lemon juice is key for citrus zest.

A seemingly complicated dessert made easy! I couldn't believe how simple and delicious this turned out. I added some sliced strawberries to the top as suggested by one of the photos and it was a great touch.
