Amazingly Good Eggnog

This recipe is near perfect. I have made it for 3+ years in a row around Thanksgiving and Christmastime and it is always a revelation. I make it pretty much exactly according to the recipe (one of the few recipes I don't have to cut down the sugar), EXCEPT I add just 3/4 c. rum rather than 2 1/2 c. I think it's important to add a little rum because it adds to the complexity of flavor. So awesome - will be making again and again for years to come, God willing.

Downeast Maine Pumpkin Bread

Moist and flavorful, but the batter was very wet and the loaves took forever to cook because I was using a regular sized loaf pan. Next time I will either use miniature loaf pans or cut down on some of the liquidy ingredients. Definitely add either nuts or chocolate chips to this - very delicious!

Raspberry Oat Bars

I used olallieberry preserves from Berkeley Bowl because I had it around. Very tasty and flavorful bars, but I did think they were too greasy and a bit too salty. I would cut down on the butter and use applesauce in place of some of the butter.

Potato Salmon Patties

Really good! The potato makes all the difference. I used a yukon gold potato. I also used real diced celery instead of celery salt, and added some diced white onion. It was nice and moist, not dry at all.

Peach Muffins

Like others suggested, I added 1/2 c. milk and 1 c. chopped peaches. I also halved the sugar (I don't like things too sweet!) and replaced a bit of the cinnamon with nutmeg instead. Also, the muffins were perfectly done after 20 min. at 400F. The result was delicious, but next time I will definitely add some nuts, like pecans or walnuts.

Chicken and Broccoli Braid

Made this for my holiday party last night and everyone raved, even though I thought it was a little overdone at 28+ minutes. Next time I'll check it at 25 minutes. This recipe is so simple and so delicious--tasty chicken and broccoli combine with the flaky goodness of crescent roll dough. Everyone asked for the recipe and I'll definitely be making it again.

Oatmeal Craisin Cookies

It was just right with one more cup of oatmeal (3 c total). I also used regular oats. Only put 1/2 c white sugar and a little less butter...everything else was the same. Will be making these again and again--thanks!

Jam Filled Butter Cookies

I rolled these in crushed pecans, which worked well. Only thing is, I feel like I've had butter cookies with finer texture and richer flavor. Still, a very good cookie with a nice twist; next time I will try it with raspberry and apricot jam!

Grandma's Hash Browns

At last, the trick to hash browns that are crispy on the outside and fluffy on the inside. A great basic recipe that you can alter in any way--the timing on boiling the potatoes was just about right. The only thing is you don't have to cool overnight (though it's probably easier); I stuck them in the fridge for just a couple hours and they were firm enough to shred. I followed everyone's advice and added a bit of oil to my butter. I didn't even need to add salt or pepper; they were perfect with ketchup.

Black Bean Vegetable Soup

Beefy Lentil Vegetable Soup

Very nice flavor! I didn't have any v8 on hand so I used a can of tomato paste and one can of chicken broth in place of water, which made it extra thick (but makes the lentils harder to cook through). Also skipped the sauce, but added garlic and extra mushrooms. Also used a about 3/4 of the meat but that was still too much--next time I'll use 1/2 pound and put extra lentils and veggies.

Chicken, Sausage and Zucchini Pasta

I tried this for Thanksgiving and it was a hit! We were all surprised it turned out so so well. We also added our own herbs and used hot Italian sausage. Cutting everything up into smaller bits makes for a more uniform texture. Thanks for the great recipe!
