How to Make Farinata
I first had farinata in its birthplace, Liguria, Italy (specifically, the little town of Riomaggiore in Cinque Terre) and fell in love with the tasty, umami-packed flavor. I like a lot of Chef John's recipes - this was easy to make but I would not say it was totally authentic. That said I think I like this version better, as the ones we had in Italy were flatter/thinner and had less of a delightful crust. I feel it benefitted from a light sprinkle of additional salt and paper before eating to really bring out the chickpea flavor. Otherwise I made it exactly as directed and turned out beautifully.

Amazingly Good Eggnog
This recipe is near perfect. I have made it for 3+ years in a row around Thanksgiving and Christmastime and it is always a revelation. I make it pretty much exactly according to the recipe (one of the few recipes I don't have to cut down the sugar), EXCEPT I add just 3/4 c. rum rather than 2 1/2 c. I think it's important to add a little rum because it adds to the complexity of flavor. So awesome - will be making again and again for years to come, God willing.

Whole Grain Waffles
As other reviewers said, this recipe is excellent - light, crispy, flavorful - for those skipping the flaxseed meal, I would recommend actually using it, because it really elevates the flavor. A couple of notes though - I made this in a standard round Belgian waffle maker and it only made exactly 5 waffles, not 6. Also, I found that I had to cook the waffles twice as long as regular waffles for the inside to hold together. Could just be the waffle-maker I'm using.
