Baked Potato Skins

Mmmmmmmm so great! The olive oil shell on the skin was a great flavor and there's really no way to mess up with measurements for this recipe. You just put the toppings you want, however much you want. Good !

Vegan Fajitas

Catherine's Spicy Chicken Soup

I tried to emulate this recipe exactly but the day I decided to make it, realized I didn't have the ingredients precisely. Had a couple jars of almost half-full salsas of two different brands and swapped one of the cans of chili beans for a can of black beans, only had one can of diced tomatoes and added twice the amount of chili powder called for. Somehow, is still turned out phenomenal and I've never heard people speak so highly of my cooking before. Thanks for an awesome base for many more great soup ideas! Also, I didn't want the chicken to overwhelm the broth so I only used four breasts and so glad I did!

Chicken Marsala

Sauce was great, chicken ended up fantastic, but what's up with "1 cup sliced mushrooms"? Chicken marsala demands lots of mushroom in my eyes and most the mushrooms were shrunken by the time the chicken was done so I added about 1 1/2 cups more and it ended up perfect!

Vegan Mexican Stew

If I were vegan, I'd probably give this another star or two, but alas, I am not, and have eaten much tastier, heartier soups. Also, I think the cumin/chili powder amounts are a little off--I ended up having to use a lot more to make this have any spice to it. I think it's a pretty good simple soup overall!

Garlic Mashed Potatoes Secret Recipe

I could feel my arteries clogging while making this dish, especially whilst adding a stick and a quarter of butter, but it was oh-so-worth it in the end. These were THE BEST mashed potatoes I've ever had--and I'm a mashed potato freak! Usually I would not even THINK of not serving gravy with mashed 'tatoes, but the flavor was so amazing, gravy would have just ruined this dish. Five stars!

Greek Pasta Salad I

All the ingredients are spot-on. This is an incredibly fresh-tasting salad that's so easy to make but looks so complex and gourmet. The oregano and basil vinegarette complement everything wonderfully, though I did accidentally use 1.5 tablespoons of each spice, not teaspoons, which ended up being the perfect amount for me and I will intentionally add more of each next time.
