Spicy Turkey Burgers

These were some of the best turkey burgers I've had. Not dry at all! VERY flavorful. My hubby couldn't stop talking about how good the house smelled while they were cooking. We grilled them in our cast-iron grill pan and halved the recipe as my turkey came in a 1 lb pkg. These were a tad mushy before cooking but I just portioned them out into round balls and froze them for about 15 mins and they were good to form into patties and smack on the grill. Will definitely make these again.

'Calabacitas Guisada' (Stewed Mexican Zucchini)

Made this as a side dish with the Spicy Turkey Burgers recipe. We ate the burgers bunless and these went very well. Much better than fries and easier too! Me and the hubby enjoyed it.

Janet's Rich Banana Bread

This was soooo good. My mom threatened me if I didn't leave her a copy of the recipe. I followed the recipe as written except used 3 bananas (they needed to be used!), mashed them and I added chocolate chips in place of the walnuts. Soooooo good and moist with a beautiful crust, just like the picture.

Best Bread Machine Bread

Made this for my husband at his request. While I normally like to make my bread in the oven as I find the breadmaker usually gives a really thick and hard crust that I don't care for, I was alone with my 2 babies (both under 2 years) while the hubster was at school. Anyway, he got this fresh out of the machine and said that it was very good and the best bread he's ever had out of a bread machine. He definitely wanted me to keep this in rotation. And as easy as it is, I have no problem with that!!!

Ricotta Bread

Very good way to use up some Ricotta. This bread is so soft, even the next day and the next. I did find that the loaf it made was quite small. Would be perfect if you're making it fresh, specifically for 1 dinner setting. But don't plan on having any leftovers. I will double next time so I will have some left over for toast in the mornings.

Zucchini Frittata

My husband and I found this to be rather bland. Nothing exciting. And we even added mushrooms and tomatoes. It needs another dimension of flavor or kick. Maybe add some red pepper flakes or something?

One Bowl Brownies

As far as ease goes, these are wesome! I mean, how often can you really make homemade brownies in 1 bowl? Other than that though, I will say that next time I will reduce the sugar some. I have a major sweet tooth but I honestly thought that these were a bit too sweet. My husband agreed. I think next time I will reduce it to 1 1/2 cups.

Strawberry Oat Muffins

My family LOVED these muffins. And they are so healthy in comparison to normal muffins that are filled with sugar. I also took some of the advice of other reviewers and used 1/2 cup of AP Flour + 1/2 cup of Whole Wheat Flour. Everything else I left the same. So good. These are definitely going to become a staple in our house. A fabulous way to use up strawberries.

Zippy Zucchini

This was ok. I give it 4 stars though for the potential. It is a great starting point to add whatever flavors or extra ingredients you may want to add. I made it exactly as is, as I pretty much always do with any recipe. Once I know how it comes out I will then modify accordingly. Next time I will definitely add some tomatoes and something else (hot sauce or red pepper flakes maybe) for some kick. It was a little one dimensional in flavor.

Black Bean Brownies

These are too weird but surprisingly not disgusting. I did not love them though. My husband and I made the recipe exactly as is. I will say they did not have the same texture as brownies. Not gooey, but just kind of packey for lack of a better word. And maybe because I knew, but I could taste a bean flavor. However, if you did not know that they were made with beans, I don't think you would be able to put your finger on what the weird flavor is. But I will definitely try to make again with the baking soda for a more cakey texture and see how they turn out. Not as good as fatty brownies but they may curb that sweet tooth just enough to resist the fatty brownies.

Easy Sausage Strata

This recipe is SOOO easy to make and I love that you can throw everything together the night before and in the morning just pop it in the oven while you're getting ready for work, etc. I will say I was unsure about the mustard in a breakfast dish. However, I couldn't hardly even taste it. I guess it just adds a tiny bit of zip. But you can definitely modify this recipe to your tastes. I think next time I will throw in some green peppers and mushrooms or onions. This is good as is, but another dimension of flavors would make it great!

Brunch Strata

YUMMMM! I had never even heard of a strata before, and I'm not alone. I was looking for something different to make for breakfast besides the same old scrambled eggs and biscuits or pancakes. I found this and it sounded good, mixing some much needed veggies in with breakfast. I tried my hand at it, prepping all the veggies the night before, and OMG it was so good. My hubby went back for seconds, said he wanted thirds but was trying to control himself. I did use sausage instead of ham as I do not like ham. I took the leftovers to work for breakfast the next morning and everyone was telling me it looked so good and smelled delicious. And none of them had ever heard of a strata either, so I got to introduce them. And believe you me, I shared this recipe. This is going to be a go-to breakfast recipe in our house. It would be fabulous for company.

Black Bean and Salsa Soup

This recipe is so easy and very good. I have found myself starting to like black beans since being married to my husband, who loves them. This is an easy way to add some flavor without digging through the spice cabinet. Very simple and tasty. Mix, heat & serve. I made this with the Salsa Chicken recipe and some cilantro lime rice. We've eaten that meal a few times already in the past month.

Salsa Chicken

Could this be any simpler? And wow, the chicken comes out SOOOOO tender. It's crazy. This is the perfect dish to make when you're low on ingredient or simply don't feel like making a lavish dinner, but sitll want something yummy. I served with cilantro lime rice and black bean soup. Fantastic!

Individual Upside-down Goat Cheese Souffles

Having never made a souffle but needing to use up some goat cheese, I stumbled upon this recipe. They are very easy to make, are so fluffy, and melt in your mouth. I did halve the recipe as it was only my husband and me. And I didn't have any walnuts so I used almonds which we prefer anyways. Next time I will add some more herbs/seasonings in as it was a tad on the bland side. But for a beginner this was a great recipe to start on and use as a base to modify to your taste. With the salad it made a wonderfully light dinner.
