Chicken Dumpling Soup

I omitted the chx in the dumplings, and halved the chicken in the pot. I added a chopped potato and substituted cinnamon for the tarragon. Also, I ended up desiring a thicker, creamier soup, so i mixed a few Tb flour with a cup of milk and stirred that in towards the end. Delicious outcome and fabulous recipe.

Exquisite Pizza Sauce

I tried to follow the suggestions of other reviews and the sauce was still "too sweet and oniony," as someone else put it. I strongly suggest you use only a quarter of the honey, two thirds of the onion powder, half the cayenne pepper, and just a dash of dried red pepper flakes. Also, if you don't have marjoram, add a little extra basil and oregano. Note: This recipe says it yields 1 pizza, but I made two twelve inch pizzas with it.

Concord Grape Pie III

I had a good size package of large seedless purple snacking grapes that were getting old so I quartered them and added sugar and a little grape juice (out of lemon) and hey, it turned out okay. I probably won't make it again, but for the record it wasn't bad.

Garlic Rosemary Mashed Potatoes

I sautéed the garlic in a little butter before adding it to the potatotes, and substituted milk for cream. I followed previous suggestions to grind/finely chop the rosemary beforehand and this turned out fabulously.

Simple Beef Flavored Gravy

If you don't like crunchy onions in your gravy, saute' them beforehand. Also, I combined a cup of hot water with a cube of beef bullion, chilled it, mixed the flour into the cold broth, then added the butter (which i melted in the microwave beforehand) and the pre-sautéed chopped onion. I also ended up adding a decent amount of salt (but i have a salty pallet) and some black pepper as well. I then microwaved that uncovered for 30 seconds, stirred it, and microwaved another 30 seconds, stirred once more, and let it go another 30 to bring it up to temperature. So quick and easy, and very tasty!

Hearty Italian Beef Stew

I had some leftover pot roast my hunny overcooked and it did very well in this recipe. I was looking for a more brothy, less thick soup, so I added extra beef broth. I also had no canned tomatoes so i skipped the paste as well. I added 1/4c chopped fresh parsley, and let the pot simmer covered a few hours- mmm the fragrance when I opened the lid. Later I simply dumped the leftover chopped potatoes and carrots from the pot roast in, let it cook a few more minutes and served. A great leftover dish!

Mexican Casserole

I threw 6 tortillas on the griddle a moment with a tiny bit of oil to crisp 'em up a bit then layered three on the bottom of a well greased cast iron skillet. Then I sautéed a small onion, 1/4c chopped green pepper and 2 clv garlic. Added the can of beans and 1/4c or so water, few dashes salt and hot sauce for flavor. I spread this mix on the tortillas, added sliced avocado, then a layer of salsa, a layer of chopped lettuce, and shredded cheddar. Put three more torts on and added the rest of the bean mix, more salsa and more cheese. Pulled her outta the oven after 15 minutes. note: the longer she cools the easier she is to cut- be patient! served with a dollop of sour cream and some fire sauce from taco bell. mm!

Terrific Turkey Chili

I parboiled a rabbit, finely shredded the meat and sautéed it with a chopped onion, 1/2 chopped bell pepper and 1/2c medium salsa. Added pkg of chili seasoning, couple dashes hot sauce, can chili tomatoes, can green chiles, can of tomato sauce, can of corn and a can of black beans. Served with sour cream and lots of cheese!

The Best Banana Bread

I went with 1/2c white sugar and 3/4c brown and used 3 bananas. drizzled it with brown sugar, cinnamon and water mixture after it came out the pan. delicious, simple.

Pressure Cooker Italian Chicken Soup

*I made this for three on the stove top* I sautéed a small onion, 2 clv garlic, 1/4c chopped bell pepper and some chopped hamsteak (instead of sausage) in olive oil. I transferred this mix to saucepan with 4c preheated chicken broth, uncooked chicken breast half, 1/4c chopped celery, 1/4c chopped carrots, 1/2 can corn, just over 1/4c chopped parsley (go fresh it's worth it!). I left it on the stove simmering covered for 1 1/2 hrs till the boys were hungry (except to remove chicken breast, shred meat and return to pot). I added 1/2 can chickpeas, a pureed 7.5oz can of spinach, a few handfuls of dry rotini (didn't have lentils or barley), and 1/2c medium salsa and a few dashes of hot sauce. This made just enough for three adults (two of which got seconds) and it was wonderful.

Raspberry Banana Bread

double the mashed bananas and the raspberries, which should be cut in halves. i went half white sugar half brown with extra brown. also added a dash and 1/4 tsp pumpkin pie spice and a dash of cinnamon. Also about 5 min. after it comes out the oven remove it from its pan and drizzle it with a syrupy mixture of brown sugar, a dash of cinnamon and water
