Chicken Parmigiana

Wow! This was really tasty and simple. Something quick to make when you can't spend too much time figuring out what's for dinner. Also great on a toasted roll/hero as a sandwich. I varied the recipe a little by adding some parmesan cheese (big cheese lover that I am!), garlic powder, onion powder and some salt into the bread crumbs and then mixing it up before breading the chicken with it. Also added a little salt to the beaten egg to make sure the chicken wouldn't end up bland, but that's just my preference. In response to the one reviewer who wanted thicker breading, what I did was double dip the chicken - coat first with the bread crumbs, then dip into the beaten egg and re-coat with breadcrumbs before actually baking (this would require some more breadcrumbs and probably another egg). Excellent recipe! =]

Cream of Broccoli Soup IV

This soup was...ok. It's a little too garlicky I think, and overwhelms every other flavor in the soup--might need to be renamed to garlicky cream of broccoli soup...Also, not sure if this was my inexperience with cream soups (although I have made sauces with this same milk and flour base in the past) or the kind of margarine I used (Land O'Lakes Light), but the mixture of the flour and the melted butter never quite "thickened" for me. It actually became clumpy and stayed that way, even after adding all the other ingredients. I ended up having to fish out clumps of flour and butter...smashing them did no good, they just became pasty and regrouped into other clumps. Doubt I'll be making this again (at least with this recipe).

Light Turkey Salad

Not happy with this salad at all. Dressing was too mustardy, and the sweetness from the sugar made it taste weird. I used red onion instead of regular onion (I prefer it for salads). I won't be making this again.

Raspberry and Apricot Rugelach

DELICIOUS!! This was my first attempt at making rugelach (I'm not Jewish)--made them for my boyfriend (who is Jewish) and also for my co-workers for Hanukkah. I gave some to my boyfriend to try and he loved them and asked me where I got them. He couldn't believe it when I told him I had made them!!! He was thoroughly impressed (and I was proud as a peacock!) I had Jewish co-workers of mine saying that they were the best rugelach they had EVER HAD!!! What a compliment! This recipe is just incredible. Highly recommended. Happy Hanukkah everyone! =]

Nutty Nougat Caramel Bites

These treats are just INCREDIBLE!! I made these for my college classmates for our last day of class but almost ran out during the day at work when I gave some to my co-workers to try (i go to night school) -- they were beggin for more and I had to keep going back to the fridge to fetch! I thought they would end up snatching up the whole batch. Also, they were relatively quick to make--didn't take very long for the nougat and caramel layers to set. The flavor of the butterscotch, milk chocolate, peanut butter and peanuts together were just divine! and that nougat!! omg!! AMAZING!!! =]

Buttermilk Cornbread Muffins

These muffins were indeed moist, but they certainly weren't sweet...in fact, they weren't sweet AT ALL--they were completely bland. As to the moistness, I added kernels of corn as a variation; I wonder if that was what might have helped with the moistness (others who have reviewed this recipe have also complained about the lack of moistness). The honey on its own is definitely not enough to sweeten them...I was wishing I would have added sugar as well. This was my first attempt at homemade corn muffins, and I must say, I will NOT use this recipe again. =[
