Baked Spaghetti I
I thought this recipe was a little bland. Since it does not have the tomato sauce base it lacks flavor since the mushroom sauce flavor is much more subtle. I may make it again. I probably would omit the canned tomatoes and just add a jar of spaghetti sauce in it's place. I also prefer mozzarella in dishes like these so I would substitute that for the cheddar. This recipe has some good potential I just thought, as is, it is missing something. It also would have more flavor if made with Italian Sausage rather than ground beef.

High Temperature Eye-of-Round Roast
I have made this roast several times, followed all the directions exactly, and have had great results. I usually serve mine with Horseradish Cream, some type of potato, and green beans. It's a very nice dinner. I've had one issue though, my roast usually turns out barely lukewarm. It is adequately cooked just not warm enough. I hesitate to turn the oven back on out of fear of drying out my roast. I usually roast the meat uncovered in a square pyrex baking dish. I'm wondering if a more insulted dish would help or if I covered it. Curious if anyone has any suggestions about this because I LOVE this recipe. Thanks.
