Carrot Casserole

I have made this probably once a week since discovering it. I lessen the sugar to 1/4 c brown sugar and add some unsweetened applesauce. Sometimes I put in honey. I always add cinnamon. My kids love this and I enjoy it too. Thanks for a great recipe!

I love this recipe. I make it with 6 ounces cream cheese and have topped it with a bluebarry sauce once and a caramel sauce another two times. Each time it gets better!

Smoked Salmon & Spinach Roulade

This recipe made for a great dish. I'm giving a 4 instead of a 5, though because I think there may be a mistake. Eight POUNDS of smoked salmon? Really? That's what the recipe calls for, but I'm thinking the writer meant 8 OUNCES. Number one, 8 pounds would require about $85 worth of salmon. Number two, I don't think you'd be able to roll it up with that much meat on it! Anyway, I used about 1/2 - 3/4 pound of smoked salmon, and the flavor was great and well-received by my company. Thank you for a unique dish.

I really liked this. I made it as written, adding pasta to spinach immediately to wilt the spinach, but used orzo pasta. Great !

Baklava

Excellent! I'd never made baklava before (though I loved to eat it), and my husband gave me the ultimate compliment: "It looks exactly like my grandma used to make." (He's Lebanese.) He said that it tasted even better! I used all walnuts, as I was making a Greek dinner and that's the customary nut to use in that part of the world.

These were only fair--not very sweet. AFter tasting them and being disappointed, I added a dollop of chocolate frosting onto each one, which made them much better.

Caramel Popcorn Balls

Although these turned out fine, smelled like Halloween of my childhood and tasted good, they are a whole lot of work and mess for a fair treat. There's nothing wrong with the recipe, and if you love popcorn balls, this is a very good one(love the caramel!); however, I would not go through the mess in my kitchen for these again. I think I dirtied every pot and bowl in the place!

Grandma Ople's Apple Pie

Great! I too used only 6 apples--I couldn't fit anymore in without overflowing. However, when it cooked down it looked like I could've added more...oh well. It turned out perfectly! The pieces stood up and weren't all soupy and falling! Everyone loved it at Thanksgiving! Thank you.

Cinnamon-Glazed Sweet Potato and Apple Bake

Excellent recipe. Not too sweet like many sweet potato casseroles. The only changes I made were to use more sweet potatoes and squash (maybe a half pound more of each) and less butter and brown sugar mix on top. This tastes great warm or cold.

Easy Quiche

This is great. Both my kids (2 & 4) and the neighbor girl had large helpings. I found it to be a nice, warm, easy-to-prepare comfort food. I added pepper and used mozzarella cheese instead of parmesan. Mmmmmmm.

Slow Cooker Split Pea Sausage Soup

Pretty good recipe, but I also agree with the "too watery" comments...and I only used 8 cups of liquid (6 cups water + 2 cups chicken broth). I'll make this again because it's easy and flavorful, but I kept it in the slow cooker for 11 hours on low and I'll use maybe 6 cups of liquid in the future (I like thick soup without much broth).

Applesauce Cake I

I really enjoyed this cake. I had never made applesauce cake before, and I was pleased with the results. I didn't have any raisins, so I chopped up an apple to add into the mix. It turned out dense and moist. Thanks for the recipe.

Fudgy Brownies I

Very , very good. I added one cup white chocolate chips, which formed a sugary crust at the bottom and was delish! I made them for a group of high schoolers, and they were gone within minutes. I will definitely make these again!
