Chicken Fried Chicken

Someone HELP me! I consider myself a pretty good cook but I have never had any luck frying chicken. This recipe looked really good so I gave it a try. Dredged it in flour, then egg, then cracker crumb mixture. Oil was hot. When I first turned the chicken over, I was thrilled at the beautiful crust. When I turned it again, my beautiful crust came off. Am I turning it too much, oil not hot enough or too hot? Someone help!! The chicken was very good, though.
