Polish Christmas Cookies

I halved the recipe and still ended up with over 4 dozen yummy cookies that reminded me of my childhood. Will definitely make them again. Thanks for the memories.

Special Buttercream Frosting

Made this tonight for some New Year's Eve cupcakes and it was fantastic. Halved the recipe and used 1/2 cup butter and 1/2 cup shortening half. Also added a smidgen of almond extract to enhance the flavor. Best buttercream I've ever made!

Cinnamon Mini-Muffins

These are yummy and quick little muffins. My kids really liked them. I would cut the margarine in the glaze next time to 2T, though.

Angel Hair with Feta and Sun-Dried Tomatoes

This is great. I tried to make it a bit healthier by using whole wheat pasta and less olive oil, and then bumping up the flavor with fire-roasted (smokey-flavored) sun-dried tomatoes.

Chicken Marinade

This is a great recipe, but I used only 2 T of oil instead of 1/2 cup to cut back on fat. I also added 1 T shredded gingerroot to give it some punch.

Sausage Egg Casserole

This is great. Just make sure you allow for the allotted set-up time. I jumped the gun and it was a little mushy in the center. Still...it tasted excellent and got rave reviews.

Suki's Spinach and Feta Pasta

This is excellent and easy. I drained most of the liquid from the tomato/spinach mixture before adding the pasta and cheese and it was the perfect consistency. Will definitely make this again.

Creme Brulee French Toast

I followed this recipe to the letter and it didn't turn out as I expected. I sliced the bread to 1" thickness but the liquid was not enough to cover the bread. I ended up with slices of bread swimming in a custard mess. I think next time I would maybe tear the bread into pieces, add the liquid, and see how it turns out. Still...the taste is great.

Seven Layer Tortilla Pie

This is a great recipe. My two year old loved it. I added green chiles to the black bean mixture. Next time I might add some chopped jalapenos to spice it up even more. Great topped with guacamole, sour cream, and more chopped tomatoes!

White Cheese Chicken Lasagna

I made this tonight for my in-laws and everyone raved and had seconds. I made a few alterations: I reduced some of the mozzarella and added a layer of provolone. I also added more garlic. Next time I would reduce the flour to 1/3 cup to make a slightly thinner sauce. And, I was thinking that some roasted red peppers would make a nice addition.

Chocolate Banana Bread
