Chicken Marsala Florentine

Whole family LOVED this... Lightly dust with flour or it will get sloppy. Added garlic and green onions and 3-4 cups of spinach at the very end so it looks fresh. Really, other than sun-dried tomatoes, doubled + almost everything except butter. Served this over wheat spaghetti and a bit of extra spinach for more color. Everyone wanted seconds. Delicious- Thank you for a great base recipe. This will be made many more times!

Spinach and Strawberry Salad

Fantastic recipe. Everyone LOVED this salad. Did make some "sugared" sliced almonds by spraying a small fry pan with PAM, adding a handful of almonds to lightly toast and then sprinkling with sugar. Only cooked about 3-4 minutes shaking all to mix. Made a perfect topping after salad was tossed in dressing. LOVE this recipe!

Tender Breaded Turkey Cutlets

Great, easy recipe. Used fat free yogurt and about a TBS of dijon mixed together, then coated them with panko and parmesan. Kept warm in oven while I was finishing everything up. DELICIOUS - kids and husband LOVED them... This is a keeper - thanks!

Chicken In Basil Cream

Delicious - whole family loved! Pound chicken. Thighs and Breasts work great. Added garlic and scallions while sautéing chicken which not only flavored the chicken, but made the whole house smell great :) ... Used chopped red pepper instead of pimento and half and half instead of cream. DOUBLE sauce! After chicken is pan-fried, I put in oven to keep warm and to make sure it was cooked through while finishing cream sauce and cooking pasta. Served chicken over pasta with sauce spooned over and sprinkled fresh tomatoes over all. DELICIOUS! :)

Chocolate Chip Banana Muffins

DEfinitely wins on "YUM" factor! Added cinnamon and nutmeg to the dry ingredients and 3 large bananas, mashed well. Made 36 mini-muffins and seriously I could eat the entire pan! They really are that good. After many, many tries, I think I have come home to my favorite banana/chocolate chip recipe! Thanks for a perfectly delicious post!

Baked Chicken and Zucchini

Such a GREAT recipe. I called it "summer chicken parmesan", as the squash, heirloom tomatoes and basil all came out of the garden. My entire family devoured it - including my 10 year old son who asked for seconds. I made the squash (larger than regular zucchini) the same way as I prepared the chicken for an added flavor and it was great. They stayed crispy and the tomatoes and basil added a fresh 'summer' taste. This will be a return and devour many, many times to come! :)

Tiramisu Layer Cake

LOVE this recipe. Also doubled liqueur (kahlua) wherever it was called for and added an extra layer of vanilla (added 3 TBS kahlua to the mix). There were three layers: one white; one coffee; one kahlua - incredibly tall - beautiful cake and DELICIOUS. Made it for my husband's birthday and all guests said it was the best cake ever. I agreed! Thank you for posting such a WINNING recipe!

Baked Asparagus with Balsamic Butter Sauce

I also cut the asparagus into 1" pieces and tossed them with a tiny bit of olive oil, salt and pepper before roasting for 15 minutes. Brown the butter; Mix with soy and balsamic and toss all together. This is the BEST asparagus - Thanks for a GREAT recipe!

Chicken and Lentils

LOVED this - whole family did. A couple of small changes: soaked lentils 1 hour before cooking. added cumin to chicken breasts (used boneless thighs) before adding to broth. And added a splash of balsamic vinegar at end. Served over basmati rice, but great on its own... Did not add tomato sauce based on reviews, but will try diced tomatoes next time for an added something. Thanks for a great recipe!

Ropa Vieja

LOVE this. Made it in the crockpot with slight variations: omitted Lipton soup mix and instead made a rub of garlic salt, onion salt, cayenne, salt and pepper - rub evenly over roast and sear on all sides. Cover with carmelized onion and garlic and topped with pico de gallo (tomatoes, onions, cilantro and jalapeno mix) - Added black beans and a few coarsely chopped red peppers and added liquid as suggested. High - 8 hours, shred with 2 forks and crack lid for last hour to help thicken. Serve over rice, top with avocado and mexican creme (sour cream would be fine) and pass tortillas. Instantly became a family favorite - Mucho delicioso!!! :)
