Andrea's Pasta Fagioli

Reviewed: Oct. 26, 2013
Great recipe by itself, but I made the following adjustments. I used vegetable broth instead of water, added a 1/2 cup of red wine, added chopped zucchini, carrots and baby spinach. Substituted garbanzo beans for navy beans and increased the grated cheese by 1/4 cup. I also used fresh herbs instead of dried and added whole wheat penne (1/2 the amount) and 1 additional cup of water to allow to cook in the soup itself right before serving. Even the vegetarian in the house was pleased with the results.

Brown Sugar Meatloaf

Reviewed: Mar. 30, 2013
Great recipe. I added diced green peppers, used bread crumbs and used ground meatloaf mix (beef, pork & veal). I also added 1 tablespoon of worchester sauce in the meatloaf as well as 1 tablespoon in the brown sugar/ketsup sauce. Yumm!

Tarragon Chicken Salad II

Love this recipe! Great as is, but I like it with the following adaptations: Omitted raisins, cut mayo to 1 cup, added red grapes, cranberries, diced apples and chopped walnuts.

Kelsey's Favorite Stuffed Green Peppers

Reviewed: Oct. 23, 2010
My husband loves stuffed peppers and this is a great recipe. I also blanched the peppers instead of boiling, added 1/2 tsp of oregeno and used minced garlic. Instead of making the rice separate, I browned hamburger and onions, added petit diced tomatos and water along with a Tbsp of worchester sauce and spices and then cooked the rice with the rest of the mixture for 20 minutes (covered). I used cheddar and motzerella cheese for something different.
