Strawberry Spinach Salad I

A little sweet but delicious. I chose to use coconut sugar, added walnuts and some dried cranberries for just the right taste for me. I may add a little feta next time around.

Stir Fried Sesame Vegetables with Rice

Wonderful and so easy to make. I used a little more sesame oil and I toasted my sesame seeds on the stove top in a frying pan fir a couple of minutes. No oil needed.

Kathy's Delicious Whole Slow Cooker Chicken

Wonderful flavor, the whole family loved it. The chicken just fell off the bone and nice and moist. I did double the sauce and served over brown rice with shitaki mushrooms and asparagus as the side. I also served small slices of ciabatta bread to lap up the delicious sauce. I didn't bother mixing the sauce in a bowl I just mixed in the crock pot and then added the chicken and turned the chicken several times before and during cooking.

Spicy Eggplant

Just loved this recipe. I added sweet chili sauce and used hot chili sesame oil and I added it in with the rest of the sauce ingredients and simmered it all together. We will definitely be having this dish again and again. Next time I will add a nice rice noodle.

Delicious Mustard Greens

This was incredibly simple and delicious. I cooked and used 2 to 3 strips of real bacon and used the little grease left from the bacon in the pan for added flavor. It's not much so I wasn't worried about saturated fats. I will cook this recipe again and again.

Simple Kale Soup

This is an awesome and simple recipe to make. If you don't have your own home made chicken stock be sure to purchase low sodium chicken stock. I used kale from my garden and red potatoes which are lower glycemic.

Unbelievable Chicken

Absolutely delicious! I used what mustard I had on hand which was mostly Dijon Mustard and a little yellow mustard and I added some ground mustard. I only did four chicken breasts and I reserved about a cup of the marinade for dipping. This is going in my favorites for sure.

JB Rice Noodles with Shiitakes, Choy, and Chiles

I loved this recipe. I did take a few of the recommendations and doubled the sauce and used one package of rice noodles. The rice noodles will soak up all the sauce so depending on how you like it you may want to reserve some of the noodles and add them to your plate when you are ready to eat it instead of putting them all into the dish. I added sugar in the raw, just a tiny bit to balance the flavor. I will make this again. Thank you for sharing.

Mexican Turkey Burgers

We loved this recipe! Absolutely delicious and so easy to make. I used the Taco Seasoning recipe available here on allrecipes which makes 1 oz and was the perfect amount of seasoning. I also ate it without the Tortilla to keep it lower glycemic. The rest I followed the instructions but did use a little more bread crumbs. Make sure to press the burgers into the bread crumbs which helps make them stick together and easier to flip and coat the other side with bread crumbs. If your serving to children you may want to eliminate the red pepper flakes from the taco seasoning or split your turkey meat in half and make half for the kids and half for the adults. We will be making this a regular in our household. Thank you for sharing.
