Fluffy Pancakes

I followed exactly...just added vanilla extract to the wet ingredients before adding to dry ingredients. It was very light and fluffy. I followed the advice of not over mixing the batter which resulted to the lightness. I will definitely make this again as my 3yo loved it!

Debdoozie's Blue Ribbon Chili

Oh wow!! This is my first time cooking chili and it turned out great! It was so easy. I cut the recipe to half as it's only 2 adults and 1 pre-schooler. Hubby totally loved it..he ate it on its own whereas I made chili burritos. For lunch today, hubby and my LO had it with rice. the only change i made was the garlic salt which i didnt have. So I just chopped the garlic and saute it together with the onion and beef. Though i think i need to omit the salt the next round as the seasoning is salty enough. Definitely a keeper as it's easy to whip up after a hard day at work.

The Best Rolled Sugar Cookies

This is my first time trying this and it was superb! I followed the other advice - adding additional cup of sugar and vanilla (but i then halved the recipe). It was sticky at first but as per a reviewer said to knead the dough before rolling and to use powdered sugar when rolling. It was easy. I worked directly on the baking paper so that I can transfer easily onto the cookie sheet. I'll be making again for my friend who has ordered from me..and as christmas gifts to my boss and colleagues :)

Dark Chocolate Cake I

I'll give it a 5 star as my hubby, 2yo son and colleagues loved it! I baked yesterday and poured choc ganache over it (recipe also from here). I baked 2 cakes plus had leftovers that i used to make cupcakes instead. Hubby ate the cupcakes when it was fresh...he said it was moist. This morning, i brought to office (which i kept overnight in the fridge), I find that it tastes better than yesterday. It's not too sweet which goes well with the choc ganache. Colleagues said that it's still very moist and delicious. Had it with a cup of hot coffee. :) I followed exactly as per recipe...no changes. I followed the advice of letting the hot cocoa mixture to completely cool before i added to the batter. I baked the cakes for 30 minutes and 17 minutes for cupcakes. I let the cake to completely cool before I remove them for their pans. I did find that I had to handle the cake with care while i was torting the cake.

Cream of Mushroom Soup I

Wow!! Superb recipe! Easy peasy! I used white button mushrooms and swiss brown mushrooms. I saute the onions, garlic and mushroom before adding the broth. I think this helps the mushroom to tenderize easier and emits it's lovely aroma. I followed the rest except for the flour which i cut down to 2T. I didn't have sherry on hand nor any other subsititue eg wine. It tastes so good..just like how fancy restaurants cook theirs.

Kentucky Butter Cake

UPDATE: I made this for my son's birthday and used buttercream icing to make it look pretty. It was a hit! I'll be doing anohter cake for my MIL tmrw but just plain and with the butter sauce. OH WOW!!!! Baked it yesterday for hubby (in conjuction with Father's Day here in Malaysia). It was absolutely yummy!!! Even the butter sauce..though i should have made extra and poked bigger holes so that the sauce can seep in. I baked in a normal square pan as I didn't have a bundt pan on hand..did the same amount of batter, temp and time. absolutely heaven! Will definitely make this again for my son's birthday next month.

Basil Tomato Soup

I couldn't find crushed tomatoes in Malaysia so I bought diced tomatoes instead. I also just used 3/4 cup of whipping cream and 1/4 cup of butter. I also sauteed garlic and onions and added to the soup. Absolutely delish and i am happy i bought the diced tomatoes which added some texture. I'll probably add some Tabasco sauce in future to give it a little heat.

Baked Honey Mustard Chicken

Rosemary Ranch Chicken Kabobs

Update: I did this recentlyin my own oven..still delish!! Previously, i tried over the fire..it didn't come out that well..i'll definitely stick to the oven. Wow!! Excellant recipe!! I made it with Ranch Dressing II for dinner last night at my MIL's place - dinner with hubby & MIL. I didn't make kabobs but whole breast meat instad. I didn't exactly follow the measurement - just went along with my instinct/ tastebud. I added on about half of the salt and didn't add on the sugar. Then I put in the oven to grill...totally awesome! It was so tender and we even scooped out the sauce from the pan. Even my 13mth old son loves it! I'm going to try again this week for my parents but since they don't have an oven, i'm gonna cook it in the grill pan over the fire stove.

Ranch Dressing II

This is my first time trying out a recipe from here and did this ranch dressing. i've never tasted ranch dressing before but i bet it's not as good as this one! It was totally easy to make...i didnt follow the measurement..just went along with my instinct/tastebud...i couldn't find onion powder on the supermarket shelf..so like one of the reviewers did..i upped on the garlic powder. Left it overnight..and used it for the Rosemary Ranch Chicken Kabobs..I'm gonna so make this again soon.
