Kyle's Favorite Beef Stew

I hate reviewing recipes I have altered, but I must say we enjoyed this one. I made the stew on the stove without potatoes, simmered for about an hour. I then made mashed potatoes and covered the stew in a pie dish and made a version of shepherds pie. Baked at 400 for 25 min to get a nice crust, very good.

Spicy Bok Choy in Garlic Sauce

Gotta like that Bok Choy! I thought it had a little too much oil, so next time I will cut out the vegetable oil all together and add a little water in its place. Other than that, this is a simple and tasty recipe.

Tortilla Soup

It's a good start. Saute onions and garlic first, added 1 small can ortega chili, 1 cup roasted red pepper salsa, 1+ teaspoon cumin. Topped with pepper jack and sour cream (the sour cream really makes it). Will make again.

Cioppino

Awesome! I made a few changes, used canned pasta sauce instead of tomatoes, a whole lot of garlic, 2 TBL red pepper flakes (the heat really makes it), red wine instead of white, 2 cups fish stock. Added mussels 7 minutes before done, the balance of items at 4 (you don't cook fish, you warm it up). Served over bed of Angel Hair. Yum!

Ham and Bean Soup

Killer soup! I doubled to ham and used Kielbasa instead of the brat. I used a bit more seasoning including celery powder (i didn't have any celery). A must try!

Chipotle Shrimp Tacos

Very Good! I reduced the peppers to 2 and seeded which was the perfect amount of heat and reduced the bacon by 1/2. I spread the tortilla with a small amount of homemade tarter sauce (pickle, cappers, mayo and lemon juice) and topped with cabbage tomatoes and guacamole . YUUUUUUM!

Beer Batter for Fish

Good start. Used heavy dark beer and about half the baking powder so not so puffy. Also cut recipe in 1/2 for 1+ pound of Talapia with plenty left over. Good Luck!

Chicken And Apple Curry

Very Good! Very Easy! Used 4 boneless theighs and cut the recipe in 1/2 adding about 1/2 cup more chicken broth, served over rice. Yum!

Cheesy Mexi-Rice Casserole

Very good. If you have kids, you may want to tone down the chili powder. The recipe does not mention the amount of chedar cheese required as a topping (which it does need), I used about a cup. I will make this again.

Jalapeno Chicken

Good. Skinned chicken, used 1 1/2 tsp Cyan pepper inplace of chili powder (hot) and a whole Jalapeno pepper. Placed in baking dish, cooked in sauce, basting every 5 min.

Southern Living magazine's Brunswick Stew

Winner Winner Chicken Dinner! Very tasty. Added celery and garlic to onion and bell pepper. I like it hot so added more fire ( habanero chili). Will do again.
