Tequila Fruit Dip and Dressing

I needed an organic fruit salad dressing and found everything but the tequila in organic. Left it out, and it was still an excellent, addicting dressing! I also used plain lime juice and cut the sugar by almost half. Used it over blackberries, raspberries, peaches, plum and mango. Heavenly!

Cuban Pork

What great flavor! I was a bit skeptical about the lime zest, but oh my, I found myself looking for more to eat with my pork. While it takes a bit of time to prep (zesting the lime), it cooks up very quickly. I did increase the garlic and EVOO and will probably increase all seasoning next time...and there WILL be a next time soon!

Baked Oatmeal I

Husband's fave oatmeal. Substituted: applesauce for oil; half the amount of sugar with turbinado; flax in warm water for eggs. Used less brown sugar and added chopped dried, tart cherries and walnuts. Yummers. Great on a Sunday morning.uu

White Chocolate Snack Mix

Love the salty/sweet combo. Can be made gluten free with changes in cereal; used rice and corn chex, with a few GF pretzel sticks. Also substituted a deluxe nut mix for the peanuts as I gave bags in a Christmas assortment. Well liked, easy to make.

Flat Iron Steak with Balsamic Reduction

Delicious. A dish worth repeating. Balsamic reduction is wonderful... does need to be balsamic vinegar, and it does need to be reduced for full flavor.

Pecan Pie Bars I

OMG...easy, transportable, very pecan pie-like. Made these for Thanksgiving, then daughter made them for Christmas. We are a gluten and dairy free family, and this recipe adapts easily. We love this dish!

Pumpkin French Toast

I doubled the recipe, but used a whole can of pumpkin and then doubled up again on spices d/t other reviews. Also baked it as another reviewer did. Really was delicious, easy and fun for a holiday breakfast.
