No Bake Peanut Butter Pie

OMG this is so easy to make and it tastes DELISH!!! Other guests were right it's even better if you crumble up Reese's Cups and mix it through before freezing. I used: Fat Free Cream Cheese, 3/4 Cup minus 2 TBS Splenda, Reduced Fat PB, Skim Milk, Fat free whipped topping. I could not find nutter butter crust so used graham cracker. It was sooo good. I didn't think it was rich at all and could easily eat the whole pie by myself ;-)

Eggplant Parmesan II

Thank you to all of you who share your wonderful recipes here. Regarding this recipe: * I used Prego Traditional Sauce 2 x 24 oz bottles. * I used fresh basil, cut up 1 big leave in small pcs * I used 2 sml eggplants (other user said less seeds, less bitter, she was right). * Skinned 1 eggplant w/ potato peeler. Took off top. Cut in 1/2 length wise, then in thin slices. I put the slices in a 1 gallon ziplock bag. * Beat 1 egg which I added to 1 gallon ziplock bag. Rubbed bag to make sure all pcs were covered. * I added 1 C of plain bread crumbs and 3/4 C of seasoned bread crumbs. Rubbing the bag to make sure all pcs were covered. * Laid them out on a plate. * Repeated these steps with 2nd eggplant. * Followed the rest of the directions of the recipe. I tried some of the slices after frying and when I was done frying I put them in a 9 x 13 dish sprinkeled them with light salt and Italian seasoning. Mixed them to make sure all pcs got some salt & seasoning. Before putting in baking dish I divided: eggplant and cheese in 6 to make sure I had 6 equal amount of layers. It turned out great. This is for Sunday, today is Friday, I hope I don't eat it all by then.

World's Best Lasagna

Thanks to all of you who share your great recipes with us. I made this recipe twice, no not for 2 separate occassions. I made the 1st lasagne on Wed night, oops too salty. I used reg Italian sausage but other than that followed the recipe to the t. Way too salty so made another one. This time I bought the sweet Italian sausage and omitted sugar and salt. Came out great except for the lasagna noodles on top. The were harder than chips. Any advise on how to get them soft and not to "curl up"? BTW: guest loved it. I bought left over containers so they could take with them, but there was none left 12 servings for 8 of us and they had salad prior to having the lasagne.

Honey Butter

Sea Bass with Honeyed Apples

Great. Made minor adj. Smart Balance butter 4 margarine. Splenda 4 honey. Used lite salt. 1 c only needed 4 bread cr. Used Tilapia. I actually baked the fish in the oven for 30 min.

Ginger Glazed Mahi Mahi

GREAT!!!! to make it healthier I adjusted this recipe slightly. I used Splenda instead of honey, light soy sauce,and lite salt. The next day, I cut up the left overs to be used in my salad.

Haddock Bubbly Bake

Everybody who had it loved it. I actually used Tilapia on which I robbed garlic powder/lite salt/ fresh blk pepper. To make it somewhat healthier used: lite salt, Healthy Req soup, Fat Free Cheddar Cheese. Also used red onion and extra virgin olive oil to "grease" dish. To make it taste even better you can add:thin sliced potatoes, or cooked ziti (or similar), sprinkle bread crumbs on top of cheese.

Coconut Cream Pie

A little too sweet as posted so the second time around I adjusted the sugar and the coconut flakes. Next time I want to try substituting sugar with Splenda.

Old Fashioned Coconut Cream Pie

I tried it twice!! and both times it was Coconut soup :-D. I read the reviews and I will also be a little more patient for the boiling to occur and I'll try the 1/2 flour and 1/2 cornstarch. Yummy!
