One Bowl Chocolate Cake II

Yummy! I loved it and so did my family. It was so easy to make that my 2 year old was able to help me with most of it. Like some others, I did change the recipe slightly. I increased the amount of cocoa used to 1 cup (you can never have too much chocolate) and I decreased the amount of sugar to 1 cup (I may even use slightly less next time as it was still really, really rich). Also, I used hemp milk instead of cow's milk. It came out moist and chocolatey...everything you want in a chocolate cake. I topped it with a super easy peanut butter frosting and sprinkled it with some mini chocolate chips. It was DELICIOUS!

Homesteader Cornbread

Not sure what all the complaints were about. The bread I made was fabulous. Even my picky 16 month old had a couple of pieces. It came out moist and crumbly with just the right amount of sweetness. I did modify the recipe somewhat and took the advice of a few. Here's what I did (I was only making it for me and my daughter so I halved the recipe): replaced half the white sugar with brown; added just over 1/2c of frozen corn; beat the mixture on low for 5 minutes; baked in a loaf pan at 375 degrees for appx 37 minutes. The only things I may do differently in the future would be use all brown sugar and add some chopped green chilies (I like it spicy). I will make this again. Thank you for sharing! :)

Homemade Black Bean Veggie Burgers

Definitely no more frozen black bean burgers. This was cheaper and most important, just as tasty. I followed some of the advice and used two eggs and a full cup of bread crumbs. I also mashed the beans in a food processor instead of with a fork (was already using it so I figured why not make it easier on myself). I baked instead of grilled. The only issue was that the larger burgers didn't stay together as well as the smaller ones I made (bite-sized for my toddler), but that didn't really bother me. Good spice. I don't usually add too much salt to my dishes anyway. I may use ground flax seed the next time. It's been a great binder in other recipes I've used it in. I would definitely recommend this recipe to others. Thank you. :)
